How To make Tuna Cakes with Dill Tartar Sauce
3/4 cup Celery
chopped
3/4 cup Onion :
chopped
2 tablespoons Cream cheese
2 teaspoons Lemon juice
1/8 teaspoon Red pepper
1/3 cup Breadcrumbs
1 teaspoon Dried dill
1 can Tuna in H20 (9 1/4 oz can)
Egg white DILL TARTER SAUCE:
2 tablespoons Mayonnaise
1 tablespoon Plain togurt
1 tablespoon Onion chopped
1 tablespoon Cucumber :
chopped
1 teaspoon Dried dill
1 teaspoon Lemon juice
Coat skillet with cooking spray, heat over medium high heat. Saute 1st two ingredients until tender. Place in a bowl with cream cheese and next 2 ingredients. Add crumbs and next 3, and divide into 8 equal portions. In a skillet over medium high heat, cook 4 cakes, 2 min. on each side. Repeat at remaining 4 cakes. Combine tarter sauce in small bowl. Serve with tuna cakes.

INGREDIENTS:
Salmon Patties
2 6 oz cans of Salmon (Do Not Drain)
2 Tbs Olive Oil
1 Tbs Butter
6 Chopped Green Onions
1 Egg
½ Tsp Salt
½ Tsp Pepper
½ Tsp Onion Powder
2/3 Cup crushed Saltine Crackers
Repeat recipe for Tuna Cakes
2 6 oz. pouches or cans of Tuna (Do Not Drain)
2 Eggs instead of 1 egg (Tuna has less moisture)
Special Tartar Sauce
1/2 Cup Mayonnaise
1/2 Cup Dill Pickle Relish
1 Tsp Parsley
1/2 Tsp Lemon Juice
1/2 Tsp Sugar
1/4 Tsp Ground Black Pepper
1 Tsp. Onion Powder
2 Tbsp Chopped Onion (optional)
DIRECTIONS:
Special Sauce: Mix all ingredients above and chill in the fridge while you are making your patties.
Salmon Patties and Tuna Cakes:
Open your cans of Salmon and place them on a plate juice and all.
Remove any large bones and skin. (You can leave the small soft bones as they are edible) Leave the juice in the plate because you will need to use it in your patty mixture.
In a large bowl add, your flaked salmon, crushed Saltine crackers,
chopped green onions, egg, salt, pepper, and onion powder. Mix it all together adding salmon juice to mixture until sticky enough to form patties. Shape them into 4 large patties.
In a skillet on medium heat add olive oil and butter then place your patties in the pan. Brown each side for 3 to 5 minutes. You may need to flip one more time to make sure they are golden brown. Remove from heat and serve. They are delicious!
