How To make Tortelli Di Zucca (Pumpkin Tortelli) L a Time
1 3/4 lb Yellow pumpkin or
- Hubbard squash (or Acorn) 1/4 lb Mostarda di Cremona (fruit
-pickled in mustard), -finely chopped 2 oz Amaretti cookies, finely
- ground Parmigiano-Reggiano cheese Nutmeg Salt, pepper 1/2 to 1 tsp. dried mustard,
- optional 2 tb Bread crumbs, optional
2 1/4 c All-purpose flour
3 Eggs, beaten well
1/4 c Unsalted butter
Typed by Manny Rothstein (This recipe is from Dal Pescatore, just north of Parma, Italy,"considered by many to be the best restaurant in the entire country" sez the Times, so it must be true.)MR This filling takes some adjusting to resemble the stuff the Santinis brought from home. Their Mostarda, which they make themselves every year, had a mustard-y bite that nearly brought tears to our eyes. The stuff we bought here, in an Italian specialty store, was much sweeter, so we added a bit of dried mustard to crank up the heat. Also, since we could find neither yellow pumpkin nor Hubbbard squash on the day we shopped for testing materials, we used acorn squash. It worked fairly well but required some additional bread crumbs to become firm enough to hold together properly. When it's done, the flavors are explosive and almost medieval, combining sweet squash with mustard-y hot mostarda and rich cheese and butter. Prepare filling up to 2 days in advance, but definitely before pasta is rolled out. Cut pumpkin or squash in sections, remove seeds. In pan bake at 350 degrees until tender. Pass through food mill into large bowl. Add
Mostarda, amaretti, 2 tb cheese and dash of ground nutmeg. Season to taste with salt and pepper. Mix well and taste. Filling should have definite mustard-heat. If not, add up to 1 ts dried mustard. Filling should also be fairly firm and loosly hold together when formed in ball. If not, add up to 2 tb bread crumbs.
In bowl mix flour and eggs. Knead into smooth ball and wrap in plastic wrap. Set aside at least 1/2 hour. Devide in quarters and work with 1 portion at a time, keeping rest tightly wrapped in plastic wrap. Knead and roll out on pasta machine to next-to-thinnest setting. Cut into long strip and cut s

PER IL RIPIENO
zucca delica o mantovana: 2 kg (1 kg pulita)
amaretti: 160 g
mostarda mantovana: 200 g
grana padano: 180 g
burro: 80 g
noce moscata: q.b.
sale: q.b.
pepe: q.b.
pane grattugiato: opzionale per aumentare la densità in caso di composto troppo liquido
PER LA PASTA
uova: 6
farina 00: 600 g (Caputo gnocchi)
sale: un pizzico
PER IL CONDIMENTO
burro: 80 g
grana padano: 40 g (grattuggiato)
salvia: 4-6 foglie
Ricetta mostarda mantovana
Ingredienti:
2 kg di mele,
400 g di zucchero
6 gocce di sciroppo (miele e vino bianco) alla senape
olio per friggere
Procedimento:
Sbucciare e affettare le mele, lasciarle in infusione per quarantotto ore con lo zucchero. Fare bollire per quindici minuti il composto ottenuto, friggere il tutto ancora caldo in una padella di ferro, lasciare raffreddare e aggiungere la senape. Porre il tutto in vasetti di vetro sigillati.

300 g Spinaci (cotti e strizzati)
300 g Ricotta
2 cucchiai Formaggio Grana grattugiato

Pumpkin Tortelli Recipe by Angela Hartnett
5-6 large eggs, preferably Italian
600g '00' pasta flour
Salt
Extra virgin olive oil
500g pumpkin (rind on)1 white onion
50g grated parmesan
1 mustard pear, chopped (optional)
4 Amaretti biscuits, chopped
100g butter
Sage
PUMPKIN TORTELLI
Pasta dough
1. Combine the flour with a pinch of salt in a food mixer.
2. Whisk the eggs with a squirt of olive oil and add slowly to the flour and salt in the mixer
3. Once the mixture is sticking to the sides of the bowl, the dough should be ready to knead.
4. Turn the dough onto a well-floured work surface and knead for 10 minutes, or until smooth.
6. cover with cling film and let rest in the fridge for at least 1 hour.
Filling
1. Season the pumpkin wedges with salt, sugar and pepper.
2. Wrap in tin foil and bake in a medium oven for 45 minutes, or until the flesh is cooked through.
3. Remove the tin foil and scrape the flesh from the rind.
4. Place the pumpkin flesh in a muslin bag and hang over a bowl and allow to drain for at least 5 minutes (you can do this overnight in the fridge if you have time).
5. Finely slice the white onion and sweat in a pan. Once soft, add the drained pumpkin flesh and cook off any remaining water.
7. Season well and press through a passoire or fine sieve. Leave to cool.
9. Once cool, add half the amaretti biscuits, parmesan, and mustard pear if using. Season to taste.
10. Roll out the dough and make the tortelli.
11. Blanche them in boiling salted water for 30 seconds, then plunge into iced water.
12. Melt the butter in a pan and cook until bubbling and just beginning to brown, season with salt and add the chopped sage.
14. Re-boil the tortelli for 4 minutes in well salted water.
15. Drain and add to the browned butter and turn gently to coat.
16. Transfer to warmed plates and finish with the remaining amaretti biscuits.
