How To make Harvest Time Meatballs
1 x Recipe Basic Meatballs
2 T Margarine Or Butter
1/8 t Instant Minced Garlic OR
-1 fresh clove of garlic, -minced, OR 1/8 t of -garlic powder 1/2 t Thyme Leaves
1/2 lb Fresh Mushrooms sliced
3 ea Med. Zucchini, thin sliced
1/2 t Salt
1/3 c Parmesan Cheese; Grated
2 ea Tomatoes
-cut into 8 wedges each Prepare the basic meatballs and set aside. Melt the margarine in a large skillet. Add the garlic, thyme leaves, mushrooms, and zucchini; cook over medium-high heat for about 5 minutes, stirring occasionally. Add the cooked meatballs; cover and simmer, stirring occasionally, until the vegetables are tender, about 10 minutes. Sprinkle with the salt and cheese. Add the tomato wedges, cover and heat for 2 to 3 minutes.

Ingredients
Salmon Meatballs
300g Tassal Fresh Tassie Salmon, skin off and diced
½ medium onion, grated
¼ cup grated broccoli stalks (save and store florets for future recipes and cooking)
¼ cup grated carrot
¼ cup grated sweet potato
¼ cup panko breadcrumbs
Rind/zest of 1 lemon
3 tbsp freshly chopped Italian parsley
1 egg white
2 garlic cloves, minced
¾ tsp salt
½ tsp ground pepper
2 tbsp parmesan cheese, grated
½ tsp Italian seasoning
1/4 tsp red pepper flakes (more if you like spicy)
1/4 tsp fennel seeds
Tomato sauce
50ml olive oil
1 diced onion
1 garlic glove, minced
2 tsp tomato paste
400g canned diced tomatoes
Spaghetti
500g barilla pasta
1 tbsp salt
100g parmesan cheese, grated
Method
In a food processor, process the salmon until it resembles a minced meat texture.
In a large bowl, mix all the salmon meatball ingredients together well until evenly combined (if the texture is a little wet add extra breadcrumbs). Roll your salmon balls a little smaller than golf balls then chill in the refrigerator for at least 30 minutes to help them set.
Heat olive oil in a large pot, color off all your salmon balls then set aside on a plate for later use. In the same pot, add the onion and garlic and cook over low heat until the onion is softened. Add the tomato paste, crushed tomatoes, herbs and 125ml (1/2 cup) water. Simmer for 25-30 minutes until thick. Season with salt and pepper.
Carefully place your salmon meatballs back into the sauce and simmer for another 20 minutes.
While your meatballs are simmering, boil a pot of water, season the water with a good pinch of salt then add your spaghetti and cook for 9 minutes or as per packet.
Strain then serve your salmon meatballs and freshly shaved parmesan cheese on top of your al dente pasta.

Bratwurst Meatballs with Smoked cheddar cheese sauce
1 lb loose bratwurst meat
1 lb other ground meat
1 ½ cups cauliflower rice
Preheat oven to 400. Spray 9x13 casserole dish with cooking spray. Mix ingredients thoroughly. Make into 1 ½ inch balls and place in casserole dish. Bake uncovered until balls are 165 degrees. About 30 minutes.
Cheese Sauce:
4 tbsp butter
1 cup heavy cream
4 cups shredded smoked cheddar cheese
¼ tsp xanthum gum
Salt
Pepper
Mix butter, cream, and cheese together in sauce pot. Stir and heat on medium heat until all ingredients are melted and combined. Sprinkle xanthum gum and mix in thoroughly until dissolved. Add salt and pepper to taste.
To serve, place meatballs in bowl and ladle cheese sauce on top.
