Chickpea Tacos with Kale Slaw and Grilled Pineapple Salsa
Whole Wheat Tortillas -1 cup AP flour -1 cup whole wheat pastry flour -¾ + 3 tbsp. cup hot water -1 ½ tsp salt -⅛ c veg. Oil Place all ingredients into a bowl and mix until dough comes together. Knead for a 2-3 minutes until dough forms a smooth ball. Separate dough into 5-7 smaller balls of dough, cover with a damp towel, and let rest for 15-30 min. Using a rolling pin or tortilla press, roll out tortillas until as thin as possible without tearing the dough. Preheat a pan to high heat, and cook the tortillas dry on the pan 15-20 seconds on each side. Place in a damp towel to prevent them from drying out while the rest are cooking. Chickpea Filling -2 tsp. olive oil (or oil spray) -1 tsp. each of cumin, paprika, chili powder, garlic powder, onion powder -1 tbsp. lime juice
