How To make Four Pepper Salsa with Chips
14 1/2 oz Italian plum tomatoes, drain
1 Med. onion, thinly sliced
1/2 c Coarsely chopped celery
1 cn 4 oz Green chilies, drained
1/3 c Chopped red bell pepper
1/3 c Chopped yellow bell pepper
1/3 c Chopped Green bell pepper
1/4 c Olive oil
2 tb Red wine vinegar
1 ts Mustard seeds
1 ts Ground coriander
1 ts Salt
1 ts Pepper
1/4 c Chopped fresh cilantro
Tortilla chips 1. Combine first 13 ingredients in a processor. Finely chop using
on/off turns. Transfer to bowl. Cover and chill at least 4 hours. Can be made two days ahead. Mix cilantro into salsa. Serve with chips. ---

1 gallon salsa & Crispy Chips Recipe-
Salsa Roja and crispy corn chips secret recipe-
Ingredients
Boiled Salsa Roja (2:45)
Water for boiling (enough to cover tomatoes & chili)
3 Roma tomatoes
1 Jalapeño or serrano pepper
Small bunch of cilantro (20 stems)
1/2 tbsp salt (Himalayan salt)
Juice of half lime (1 tbsp)
-Adjust citrus and salt to taste after blending
Fresh Salsa Roja (5:07)
3 Roma tomatoes
1 Jalapeño or Serrano pepper (adjust depending on spice level of pepper)
Small bunch cilantro (10 stems)
1 tsp salt (Himalayan salt)
-Adjust citrus and salt to taste after blending
Roasted Salsa Roja (8:07)
3 Roma tomatoes+ 1 ripe vine tomato
1 Jalapeño or serrano pepper
Small bunch cilantro (20 stems)
1/2 Tbsp salt (Himalayan salt)
3 garlic cloves
1/4 medium onion
Juice of 1 lemon
-Adjust citrus and salt to taste after blending
-If you are using regular table salt use half suggested amount of salt
-if you have access to key limes you will have a better citrus flavor to your salsas
-salsa will last 5-7 days refrigerated in a tightly sealed container
-If you add onion to your salsa it will last 4 to 5 days in the refrigerator

We have layered our platter by first putting the Doritos Nachos then our savoury salsa. Next, we layered it with the tangy BBQ chicken ???? and poured some cheese sauce on our platter with a bit of mayo and olives for seasoning!

Ingredients:
BBQ Chicken:
- Oil 4 tbs
- Chicken (strips) 1/2 kilo
- Bbq sauce 3/4 cup
- Garlic powder 1tbs
- Black pepper 1 tsp
- Salt 1 tsp
- Red chilli powder 1 tsp
- Paprica powder 1 tsp
- Dried Oregano 1 tbs
- Dried parsley 1 tbs
Mexican Salsa:
- Tomatoes 1 medium chopped
- Onion 1 medium chopped
- Cucumber 1 medium chopped
- Tomato ketchup 2-3 tbs
- Sriracha sauce 2 tbs
- Coriander leaves 2 tbs
- Salt to taste
- Lemon juice 1 tbs
Cheese Sauce:
- Butter 2 tbs
- Turmeric powder 1/4 tsp
- Milk 300 ml
- Cheese 1 1/2 cup
- Sriracha sauce 1 tbs
- Corn starch slurry 2 tbs
Other Ingredients:
- Doritos chips 1 pack

SALSA ROJA - Taqueria Style | Perfect w/ Chips, Tacos, Quesadillas & Burritos
The perfect red salsa for chips, tacos, burritos, quesadillas & beyond! You can adjust the spice level to your liking by adding more or less peppers!
SALSA ROJA (mexican style red salsa)
INGREDIENTS
- 6-8 tomatillos (depending on the size)
- 20 chile de árbol
- 2 garlic cloves
- 1 serrano pepper
- 1/4 white onion
- 2 cups water
- 1 tsp chicken bouillon (Knorr caldo con sabor de pollo)
- Salt to taste
INSTRUCTIONS
1. Start off by removing the husks of the tomatillos. Then give them a good rinse, removing the sticky sap.
2. Add them to a pan lined with aluminum foil. Char both sides.
3. Add in the garlic, serrano pepper & white onion - char
4. Add 2 cups of water. Cover & simmer for 7-10 minutes or until the tomatillos change color.
4. Reserve the cooking liquid. Let the liquid & all the contents cool completely.
5. Add the contents to a blender including enough water to help everything blend & come together -about 1/4 cup
6. Add in chicken bouillon & plenty of salt to taste.
7. Blend until smooth
8. Refrigerate & serve with whatever you'd like!
