How To make Toffee Crunch Cookies
2 3/4 c All-purpose flour; unsifted
1/4 c Cake flour; unsifted
1 1/4 ts Salt
3/4 lb Unsalted butter; softened
1 1/3 c Granulated sugar
2 1/2 ts Vanilla extract
9 Chocolate covered almond
-toffee =-1.4 ozs each/chopped 1 c Almonds; chopped
Recipe by: Baking for Gift Giving, Lisa Yockelson Preheat oven to 350 degrees; line 2 cookie sheets with parchment paper. Sift together the flours and salt. Cream the butter in the large bowl of an electric mixer on low speed for 5 minutes. Add the sugar in two additions, beat for 2 minutes on moderate speed after each portion is added. Blend in the vanilla extract. On low speed, add the sifted mixture and mix until the particles of flour are absorbed. Stir in the toffee and almonds. For each batch, drop heaping tablespoon-size mounds of dough onto a lined cookie sheet, spacing the mounds about 2 inches apart. Bake for 15 minutes, or until golden. After 1 minute, transfer the cookies to cooling racks using a wide metal spatula. Cool completely. Store in an airtight container. Penny Halsey (ATBN65B). -----

Thick and Chewy Chocolate Chip Cookies Recipe:
8 tablespoon or 1/2 cup salted butter
1/2 cup white sugar
1/2 cup dark brown sugar
1 egg
1 tsp vanilla
1/2 tsp salt (kosher)
1/2 tsp baking soda
1 1/3 cups AP flour
1 cup large chocolate chips
In a saucepan, melt the butter on medium heat and let it continue to foam up to create browned butter. Remove from heat once it’s golden brown and let cool completely.
In a large bowl, combine the white sugar and brown sugar with the butter. Mix well then add an egg. Mix again and add vanilla, salt, and baking soda. Once it’s a ribbon-like consistency, add the flour and chocolate chips. Stir until everything is combined.
Scoop into round dough balls on a parchment-lined baking sheet. Sprinkle with finishing salt if desired. Chill 10 minutes if you’d like and bake for 9-10 minutes at 350º F.
Cool and serve
Thin and Crispy Chocolate Chip Cookies Recipe:
8 tablespoons or 1/2 cup salted butter
3/4 cup white sugar
1/4 cup brown sugar
1 egg
2 tsp vanilla
1/2 teaspoon salt
1/4 tsp baking soda
1 tablespoon milk
1 cup AP flour
1/2 cup chocolate chips
In a saucepan, melt the butter. You can make browned butter if you’d like or just leave it melted but cooled completely.
In a large bowl, combine white sugar, and brown sugar. Add the butter and mix well. Next, add the egg again until you get the gel consistency. Then add the vanilla, baking soda, salt, and milk. Mix again. Once it’s combined, stir in flour and chocolate chips. The dough might be a little wet and hard to scoop. You can put in the fridge to firm up for 10 minutes.
Once ready, scoop small balls onto the baking sheet lined with parchment paper. If needed, put in the freezer for 5 minutes while the oven heats up. Bake at 375 degrees for 14-15 minutes until it’s completely flat and evenly browned. You want it to be crispy throughout. Cool completely and enjoy.

2 teaspoons espresso powder
2 teaspoons kosher salt

2 large eggs
2 teaspoons vanilla extract
2 ½ cups all purpose flour
6 oz cacao chocolate, 50-70% cacao, chopped

Loaded with delicious skor toffee bits these easy cookies require no chilling and take only 30 minutes to bake!
Chewy toffee cookies recipe
Ingredients:
1+1/4 cup all purpose flour 165g
1/2 teaspoon baking soda 3g
1/4 teaspoon fine sea salt 1.5g
1/2 cup salted butter (softened) 113g
1/3 cup granulated white sugar 65g
1/3 cup packed brown sugar 60g
1 large room temperature egg 50-60g
1 teaspoon pure vanilla extract 4g
3/4 cup Skor toffee bits 120g
Directions:
Preheat oven to 350F/175C. Line two cookie sheets with parchment paper. In a medium bowl combine flour, baking soda and salt. Whisk until combined. I’m a separate large bowl combine butter and both sugars. Cream on medium low for 2-3 minutes until we’ll combined. Scrape down the bowl. Add the egg and vanilla and continue mixing on medium low for another 2-3 minutes. The mixture should be light and airy. Scrape down the bowl and add the dry ingredients. Mix in low until most of the flour is incorporated and then increase to medium low mixing until the dough just comes together. Add in the toffee bits and mix until well combined.
Using a 1.5tbs cookie scoop drop dough onto parchment lined cookie sheets ensuring that you leave some room for spreading. Bake 8-10 minutes removing the cookie from the oven as soon as the bottoms are golden brown. Transfer immediately to a wire rack to ensure that the bottoms of the cookies don’t over bake.
Store cookies in an airtight container in the fridge for up to 5 days. These cookies are the best fresh baked when the bottoms are nice a crispy and caramelized. Once stored the moisture from the cookies will make the bottoms soft, but I promise they are still delicious!
