How To make Thai Glass Noodles (Yam Woon Sen)
2 oz Dried mung bean noodles
1 tb To 2 tb vegetable oil
1 Whole chicken breast,
-boned, skinned and -coarsely chopped Salt and pepper to taste 1 Fresh red or green chile,
-chopped 3 tb Lime juice
2 tb Nam pla (Thai fish sauce)
1 ts Sugar
3 Shallots, peeled, thinly
-sliced 1/2 c Fresh coriander leaves
6 oz Cooked bay shrimp
Shredded lettuce 1 tb To 2 tb crisp-fried shallots
-(optional) This recipe comes from the Oriental Hotel in Bangkok, location of the Thai Cooking School. It has been adapted for the American cook. With this recipe it's necessary to use mung bean glass noodles rather than those based on rice flour. Check the ingredients on the package when buying. Put mung bean noodles in a bowl and pour in lukewarm water to cover. Let soak until soft and pliable (about 15 minutes). Drain. Add noodles to a large pot of boiling water. reduce to medium heat; cook until noodles are plump and glass like (3 to 5 minutes). Drain in a colander; rinse with cold water; drain again. Cut into 3 or 4 inch lengths. Chill. Pour oil into a hot wok or skillet. Add chicken; saute until it loses it's pink color. Break into small morsels. Season with salt and pepper to taste. Cool. Mix together chile, lime juice, nam pla, sugar, shallots and coriander; pour over noodles and mix thoroughly. Add chicken, shrimp and chilled noodles; mix well. Serve on a bed of shredded lettuce. Garnish with the optional crisp fried shallots. Serves 4 to 6. NOTE: Crisp fried shallots are available in Asian grocery stores. San Francisco Chronicle, 8/29/90. As far as the crisp fried shallots go, they're easy to make. Just fry some sliced shallots in a little oil until they're browned and crisp. I wouldn't hesitate to substitute dried onion flakes fried in the same way... I add them to a lot of Thai soups for an extra flavor accent. Good stuff! Posted by Stephen Ceideberg; September 28 1992.

RECIPE: Yum Woon Sen (serves 2-3)
* ** 80g (3 oz.) Glass noodles
150g (5.5 oz) Ground pork (alternatively ground chicken)
100g (3.5 oz) Shrimp
2-3 Celery sticks
2-3 Spring onions
1/2 Big yellow onion
2-3 Thai Shallots
1 big Tomato
1/2 Cup Roasted peanuts
1/4 Cup Dried shrimp
* Let the glass noodles soak in a bowl of cold water while you start preparing the ingredients (approximately 10 minutes but it can vary depending on the brand of noodles).
** When you take the noodles out of the boiling water you should immediately rinse them in cold water until they cool of . This is to stop the cooking process and prevent the glass noodles from becoming a lump of jelly.
Dressing
2 1/2 Tbsp Sugar
3 1/2 Tbsp Fish sauce
3 1/2 Tbsp Lime juice

Yum Woon Sen (Thai Glass Noodle Salad) is a popular Thai salad dish. The word “Yum” literally translates to “mix or toss”, which refers to a type of Thai salad. While “Woon Sen” means “glass noodles”.
Thai Glass Noodle Salad is my favorite Thai salad. It’s the perfect summer dish that everyone must eat.
Thai Glass Noodle Salad Recipe Written Recipe:

Cook time: 20
For the glass noodle salad:
6 ounces glass noodles
1 tablespoon avocado oil, or oil of your choice
5 tablespoons peanuts
3 tablespoons dried shrimp
½ pound shrimp, peeled and deveined
¼ pound ground pork
1 tablespoon fish sauce
½ small onion, sliced into thin slices
1 medium shallot, sliced into thin slices
2 stalks Chinese celery, sliced into thin slices, or replace with regular celery
8 small grape tomatoes, halved
¼ cup cilantro, chopped
For the dressing:
7 tablespoons lime juice
6 tablespoons fish sauce
1 ½ tablespoons palm sugar, or replace with granulated sugar
4 medium bird’s eye chilies, minced
3 garlic cloves, minced

Ingredients
1 cup dry glass noodles (bean threads) soak in water
2 TBs dried shrimp
80 g ground pork
8-10 shrimps
10 coriander leaves
3-4 coriander roots
1 tomato, cut into wedges
¼ cup julienned onion
¼ cup roasted peanuts
2 Tbsp dried shrimp
½ Tbsp palm sugar, finely chopped
½ Tbsp granulated sugar
2 Tbsp + 1 tsp fish sauce
2Tbsp fresh lime juice
1 Tbsp Tamarind juice
*Thai chilies, to taste
1 Tbsp Chili sauce for boost the spice and colour (optional)

Recipe: Spicy Glass Noodles Salad(Yum Woon Sen) | Thai Girl in the Kitchen
Ingredients;
- Prawns and Sausages as you like
- Minced Chicken/Pork 50 g
- Light Soy Sauce 1 tbsp
- Glass Noodles 2 cups
- Onion 1/2
- Tomato 1/2
- Celery 1 cup
- Coriander as you like
- Roasted Peanut 1 handful
Sauce;
- Red Chilis at your desired spice level
- Lime 2 tbsp
- Sugar 1/2 tbsp
- Fish Sauce 2 tbsp
- [Optional] MSG a little bit
