Classic Taco Salad
Growing up on a farm, a classic taco salad was a staple! During the summer, when we'd all get in late from outdoor chores, the easiest thing to throw together was this recipe. And what's great is that each eater can customize it for their personal preference. Consider this a weeknight meal solution!

INGREDIENTS
For the meat:
- 1 lb ground beef (I use 92% lean)
- 1/2 medium onion, diced
- 1 tbsp chili powder
- 1/2 tsp cumin
- 1 tsp dried Mexican oregano
- 1/2 tsp salt
- 1 15-oz can fire-roasted diced tomatoes
- 1 15-oz can red kidney beans, rinsed and drained
For the dressing:
- 3 tbsp ketchup
- 1 1/2 tsp Worcestershire sauce
- 2 tsp honey
- 2 tbsp red wine vinegar
- 1 tsp chipotle powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/3 cup neutral oil
For the salad:
- 2 heads romaine lettuce chopped
- tortilla chips
- avocado or guacamole
- shredded cheese
- salsa
- hot pepper mustard
INSTRUCTIONS
For the meat:
- In a large skillet or saucepan, brown the beef and onion over medium heat, using a spoon or spatula to break it up into small pieces.
- Once browned, about 4-6 minutes, add the chili seasoning, oregano, cumin, and salt. Stir for 30 seconds and add the tomatoes and kidney beans. Turn the heat to a low simmer and cook for 10-15 minutes, or until most of the liquid has reduced.
- Once cooked, remove from heat and set aside.
For the dressing:
- In a dressing shaker or small jar, combine the ketchup, vinegar, honey, Worcestershire sauce, chipotle powder, onion powder, garlic powder, salt, and oil. Shake until combined, taste for seasoning, and set aside.
For the salad:
- To serve the salad, start with chopped lettuce. Top with some of the meat mixture, chips, dressing, and any garnishes.

to make the Cumin Ranch -
at about a half a teaspoon to a tablespoon of cumin to a bowl and then add in as much hidden valley Ranch as you like.
I had leftover taco meat so it made it really easy for me to put this together...
All I had to fry with some leftover shells for a little bit of a crunch and I added on some sour cream and onions cheese and topped it off with a hint of spice ????

TACO SALAD: Delicious Easy Recipe Perfect for Taco Tuesday or a Hot Summer Day
This super delicious, easy Taco Salad recipe is perfect for Taco Tuesday, or when it's really hot outside and you just don't feel like heating up your kitchen. It's tasty and filling and is complimented by a creamy sour cream and chile dressing that adds just the right amount of spice. It's all the deliciousness of tacos - with ground beef, black beans, avocados, & cheddar cheese - and is certain to be a hit with your family. Here's my easy recipe for Taco Salad:
Taco Salad
1 lb. ground beef (cooked however you like your taco meat prepared. I add cumin, garlic powder, chile powder, and salt to mine)
1 16-ounce can black beans, rinsed & drained (I only use half a can in my salad, but put as much or as little as you like)
1 head romaine lettuce, cut in bite-size pieces
1 medium tomato, diced
1/2 cup red onion, chopped
3/4 cup cheddar cheese, grated
tortilla chips of your liking for garnish
(Because this is all about how you like it, these are only suggested amounts.)
For the Creamy Sour Cream & Chile Dressing:
sour Cream
mayonnaise
chile powder
Mix together 2 parts sour cream to 1 part mayonnaise..and add in about 1 - 2 teaspoons chile powder. Mix well. Should turn into a light pink color.
You can substitute low fat cheese and sour cream and leave out the tortilla chips, if you are trying to eat a little healthier. But, this salad is so delicious, it's worth splurging on. Besides, anyone who is eating a Taco Salad on a Taco Tuesday, is already doing better than most!
