How To make Strawberry Amaretto Cheesecake
1 c GRAHAM CRACKER CRUMBS
1/4 c GRANULATED SUGAR
2 tb BUTTER (unsalted), softened
In a small mixing bowl, -combine the crumbs, sugar, -and Butter. Blend well with -fingers, fork, or pastry -blender. Press onto the bottom of a -well-buttered springform -pan. Chill for 30 minutes. FILLING 2 lb CREAM CHEESE, softened
1 1/2 c GRANULATED SUGAR
1 c HEAVY CREAM
6 EGGS
3 tb LEMON JUICE
1/2 ts brANDY or brANDY EXtrACT
1 c SOUR CREAM
1 tb VANILLA EXtrACT
2 tb ALL-PURPOSE FLOUR, sifted
1 c FRESH StrAWBERRIES, chopped
In a large bowl, beat the -cream cheese, sugar, and -cream Until smooth. Add the eggs, -one at a time, making sure -that The mixture is smooth and -creamy. Fold in the -strawberries. Pour mixture into the -chilled pan and bake in a -pre-heated 425 Degree F oven for 15
-minutes, then reduce the Temperature to 275-degrees F -and continue to bake for 1 Hour. Transfer to a wire rack and -allow to cool for 3 hours. TOPPING 2 1/2 c FRESH StrAWBERRIES, chopped

1 tb GRANULATED SUGAR

INGREDIENTS
FOR THE CHEESECAKE
3 8-oz. blocks cream cheese, softened
1 c. sugar
3 large eggs
1/4 c. sour cream
1 tsp. pure vanilla extract
1 tsp. lemon zest
Sliced strawberries, for garnish
FOR THE CRUST
15 graham crackers, crushed
5 tbsp. butter, melted
2 tbsp. sugar
pinch of kosher salt
FOR THE SAUCE
1 c. strawberry preserves
2 tsp. lemon juice
DIRECTIONS
1. Preheat oven to 325º and grease a 9” springform pan with cooking spray. Make cheesecake mixture: In a large bowl using a hand mixer, beat cream cheese and sugar until combined. Add eggs and beat until combined, then add sour cream, vanilla and lemon zest. Divide cheesecake mixture into four bowls.
2. Make crust: Stir together graham cracker crumbs, butter, sugar, and salt until completely moist. Spray a 9” springform pan with cooking spray and press graham mixture into prepared pan until packed. Pour cheesecake mixture over crust.
3. Bake until slightly jiggly in the center, about 1 hour 10 minutes. Let cool 1 hour in oven, then refrigerate until completely cool, at least 4 hours and up to overnight.
4. Make glaze: In a small saucepan over medium heat, combine strawberry preserves and lemon juice. Whisk constantly until the mixture is smooth.
5. Top the cheesecake with strawberries, then brush the glaze over strawberries. Slice into wedges and serve cold.

Real talk though, this cheesecake was so good. I think it might be my favorite cheesecake I’ve ever made. Fair warning, it only freezes well for about a month. Afterwards, the glaze becomes dry and flakes off, losing its great taste and texture. The actual cheesecake part is still fine and safe to eat, just tastes like it’s topped with dry baking chocolate.
