How To make Stir Fried Chicken and Broccoli
8 Broiler-Fryer Chicken
-Thighs, boned 1/4 ts Ground Ginger
1/4 ts Pepper
3 tb Peanut Oil
1 bn Fresh broccoli, sliced thin
-crosswise 1 c Sliced Green Onion, white
-and green parts included 3/4 c + 2 T Chicken Broth, divided
1 ts Salt
1/2 ts Sugar
1 tb Cornstarch
1/4 c Grated Parmesan Cheese
Whole Wheat croutons (recipe follows) Chop chicken into bite-size pieces. Sprinkle ginger and pepper over chicken. In a large fry pan or wok, pour oil and heat to high temperature. Add chicken and stir-fry 3 minutes or until brown. Push chicken to side and add broccoli and onion. Stir-fry 3 minutes more. Mix together 3/4 cup broth, salt and sugar and stir into fry pan. Reduce heat to medium-high, cover and cook 2 minutes. Add cornstarch to remaining 2 tablespoons of chicken broth and stir until smooth. Stir into fry pan and cook 1 minute; remove from heat. Stir in parmesan cheese, sprinkle with whole wheat croutons. Serves 8 Whole Wheat Croutons Cut 4 slices whole wheat bread into 1 inch cubes. Mix together bread cubes, 2 tablespoons melted butter, 1 tablespoon chopped parsley, 1/2 teaspoon garlic salt. Spread one layer deep and toast in 300 degree oven 20 minutes or until crisp. Ingredient list:
Chicken
Broccoli
Ginger (minced)
Garlic (minced)
Light soy sauce
Oyster sauce
Sesame oil
Cooking oil (peanut oil 100%pure)
Tapioca starch
Water for starch
Dark soy sauce
Chicken stock
Instructions:
1. Marinate chicken w soy sauce, starch, and cooking oil
2. Make starch mixture (starch and water) set aside
3. When wok is hot, add 2 tbsp of cooking oil
4. Add ginger
5. Add garlic (stir 7-10sec)
6. Add chicken (4-6 min)
7. Remove chicken
8. Add 2 tbsp of cooking oil
9. Add broccoli, oyster sauce, and chicken stock
10. Mix for a bit. Then cover and simmer 2-3 min
11. Add starch mixture, chicken, and a bit of sesame oil
12. Add 1 tbsp of dark soy sauce
DONE !!! So delicious!!

Easy & Healthy Chinese Chicken & Broccoli Stir Fry ~ Chinese Wok Recipe
INGREDIENTS
1 large sliced chicken breast
2 cups broccoli florets
1 sliced carrot
oil
water
slurry - equal water and starch
Chicken marinade:
2 tbsp. soy sauce
2 tsp. rice wine
1 large egg white
1 1/2 tbsp. cornstarch
Sauce:
1/2 to 3/4 cup chicken broth
2 tbsp. oyster sauce
2 tsp. dark soy sauce
3 cloves minced garlic
1 -2 tsp. minced ginger
white pepper
drizzle sesame oil
Prepare all ingredients before cooking.
Mix chicken, soy sauce, rice wine, egg white and cornstarch. Cover and refrigerate for 30 minutes.
Mix all ingredients for sauce and whisk well.
Blanch broccoli florets and carrots.
When water comes up to a light boil add chicken and give one or two pushes so not to stick together. Blanch for about 2 minutes and remove.
Clean wok and add sauce. Bring up to a simmer for one minute.
Add chicken, broccoli, carrots and slurry.
Stir until thickened and all chicken and veggies coated.
Remove from heat immediately.
Serving with rice. Enjoy.
