Ingredients required for making peppery cauliflower recipe - serves 4
* medium cauliflower cut into medium sized florets
* 1 large red onion
* 1 teaspoon salt or as per taste
* 1 teaspoon black peppercorns crushed coarsely
* 1/2 teaspoon kashmiri red chilli powder (adjust proportion according to your preference). You can also use paprika to avoid the chilli heat.
* 1 tablespoon thick tomato paste/tomato sauce or ketchup/tomato puree
* 1/2 teaspoon garam masala powder (optional)
* 1 teaspoon sugar (optional)
* 3 tablespoon oil or adjust proportion according to your preference
* fresh coriander leaves as much or as little chopped
Serve it as a side with rice/roti/paratha

▶️ RECIPE INGREDIENTS: (3 - 4 servings)
500g Cauliflower (Cut into large florets)
2 Cups / 1 Can (540ml can) Cooked White Kidney Beans / Cannellini Beans
2 Cups / 300g Fresh Tomatoes
17g / 4 to 5 garlic cloves
7g / 1/2 Inch Ginger
3 Tbsp Olive oil
1+1/2 Cup / 200g Onion - Finely Chopped
1 Teaspoon Turmeric
1 Teaspoon Ground Cumin
1 Teaspoon Ground Coriander
1/4 Teaspoon Cayenne Pepper (Optional)
Salt to taste (I have added 1+3/4 Teaspoons of pink Himalayan salt)
3 Cups / 700ml Vegetable Broth (low sodium)
Garnish:
1/2 cup / 20g Cilantro / Coriander leaves - finely chopped
Freshly Ground Black Pepper to taste (I have added 1/2 Teaspoon)
Drizzle of Olive oil (I have added 1 tablespoon of Organic Cold Pressed Olive Oil)
OPTIONAL - You can also add some lemon juice if you like it a bit tangy
▶️ METHOD:
Add the tomatoes, garlic and ginger to a blender and blend it to a fine puree. Set aside.
To a heated pot add the cooking oil, onion, 1/4 teaspoon salt and fry it on medium high heat until the onion caramelized.
[PLEASE NOTE: Reduce the heat to medium or medium-low before adding the spices, this will prevent it from burning]
Now add the turmeric, ground cumin, ground coriander, cayenne and fry it for a few seconds. DO NOT fry it for too long other the spices may burn and burnt spices tastes bitter. Add the puree and cook on medium to medium-high heat until it forms a thick paste and the oil starts to separate.
Add the cooked white beans, salt ,vegetable broth. Mix well and cover and cook for 10 minutes on medium-low to low heat, this will blend/intensify all the flavours.
Uncover and add the cauliflower and cook for 7 minutes or until the cauliflower is cooked but still has a bite to it.
Uncover and turn the heat to medium-high and cook for another 1 to 2 minutes or to your desired gravy consistency. Turn off the heat. Garnish it with cilantro, ground black pepper and a drizzle of olive oil. You can also add some lemon juice if you like it a bit tangy. Mix very gently and serve hot with rice or any flatbread of your choice.
▶️ IMPORTANT TIPS:
- Adding salt to onion will release it's moisture and will help it cook/caramelize faster, so please don’t skip this step
- Fry the onion until it’s nicely caramelized, this will add a lot of flavour to the dish
- Reduce the heat before adding the spices, this will prevent it from burning - burnt spices will make the dish bitter
- The garnish is what completes the dish so please do not skip any of the ingredients
- Every stove is different, so if needed adjust the cooking time and the heat of your stove accordingly

Ingredients:
Oil 1/2 Cup
Onion 1
Tomatoes 2
Ginger Garlic Paste 1 Tbsp
Potatoes 4
Cauliflower 1
Green Coriander (handful)
Green Chillies 2
Ginger Slices 10-12
Salt 1 Tbsp
Red Chilli Powder 1 Tbsp
Coriander 1 Tbsp
Cumin Seeds 1 Tsp
Turmeric Powder 1/4Tsp
Garam Masala 1 Tsp
Method:
First in a pan at medium heat we will take half cup of oil and chopped onions stir until light gold colour then add 1 Tsp of cumin seeds and 1 Tbsp Ginger Garlic Paste stir fry for 2 minutes. Now add 2 chopped tomatoes, Salt, Coriander , Red Chilli powder and Turmeric powder stir for two minutes then add half of water mix and place the lid for 10 minutes until all the masala properly cooked and make sure oil is separate from Masala.
Once masala is ready then Add Cauliflower stir for 5 minutes and place the lid for 10 minutes so the Gobi gets soften. Now at this stage Add potatoes (Aloo) mix and place the lid for another 15 to 20 minutes so the potatoes and Cauliflower cooked properly and oil is separate from handi.
Garnish with Garam Masala, Coriander, Green Chillies and Some ginger slices.
Yummy Aloo Gobi is ready.
Serve with homemade Chapati and Enjoy

Cauliflower And Potato Curry With Green Peas - Aloo Gobhi Masala - Vegan Recipe
This delicious Indian Style potato and cauliflower recipe is known as aloo gobi. With some basic spices you can easily make this curry and soon it will become your family favorite.

Ingredients required for making aloo gobi masala recipe - Serves 6 to 7
* Cauliflower (Gobhi / Fulkopi) - 700 gm / 1.5 lb
* Potato (Aloo) - 550 gm / 1.2 lb / 2 to 3 large
* Onion - 140 gm/5 oz/ 1 cup finely chopped
* Ginger - 1 inch by 1 inch
* Garlic - 4 large. You need 1 tablespoon heaped grated ginger + garlic (together)
* whole green chili - 1 (optional)
* Crushed tomatoes (canned) - 3/4th cup. You can even puree two large tomatoes in your blender. All you need is 3/4th cup.
Alternatives to tomato - If you are not on a vegan diet you can use 4 tablespoons of yogurt. You can even grind some red capsicum to get that color and add lemon juice at the end of the dish to get that hint of sour flavor. You can even use 1 tablespoon of tamarind pulp.
* Frozen green peas - 1/3rd cup . Can even use fresh ones.
* Kashmiri red chili powder - 1 teaspoon. You can even use paprika or 1/2 teaspoon of cayenne pepper and 1/2 teaspoon of paprika or just 1/4th teaspoon cayenne pepper. Adjust the proportions according to your preference and liking.
* Turmeric powder (haldi) - 1/2 teaspoon
* Ground coriander seeds (dhania powder ) - 1 teaspoon
* Garam masala powder - 1/4 th teaspoon
* salt - as per taste
* Sugar - 1 teaspoon (totally optional)
* Coriander leaves (cilantro ) - as per taste
* Oil - 4 tablespoons
Serve this with rice or roti.
