Here’s a really delicious SPICED APPLESAUCE recipe. Enjoy it on its own or serve it with yoghurt and berries, ice cream, pork chops or your favourite main!
Applesauce is a great treat to have at the ready for whenever hunger strikes and you go looking for a quick snack. It’s also wonderful spooned onto cereal, fresh fruit or yoghurt, and don’t be surprised to see it next to a favourite entree; applesauce is a beloved condiment too.
We also like how easy applesauce is to prepare. During the testing of this recipe, we decided to amp up the flavour of the apples by complimenting them with a mix of dark brown sugar, spices, cider and lemon. The result is a SPICED APPLESAUCE like no other.
APPLE PICKS
Making this applesauce is easy enough, the toughest part being what varieties of apple to use. Honeycrisp or Golden Delicious apples are sweet, McIntosh and Jonagold are moderately sweet and Jonathan and Cortland are the most tart in this group. Sometimes, the best applesauce comes together when we combine different varieties. Let experimentation be your guide. MASH UP
Cooking this sauce on moderate heat is the way to go, but don’t cook for too long - apples get tender quite quickly, and in this recipe, also break down into the sugar, cider and spice mix. Although you might be tempted to pull out an emersion blender and zip the mixture to a fine consistency, we suggest you don’t. Instead, do a gentle mash with a potato masher. You’ll see how having little bits of apple chunks in the finished sauce adds interest and pops of flavour when you go to enjoy.
I already mentioned a few ways you can enjoy this SPICY APPLESAUCE, but here’s how we do things at Weekend at the Cottage! Serve it with plain yoghurt and this GLUTEN-FREE GRANOLA. Imagine it all chunky and drippy over this HOMEMADE VANILLA ICE CREAM. Lastly, place a little bowl of it on your table when you make and serve our OVEN-ROASTED PORK TENDERLOIN or these OVEN-BAKED PORK CHOPS. Works each and every time.

Pick some apples then make this SPICED APPLESAUCE. You’re going to love it!
INGREDIENTS
1 teaspoon of whole cardamom
1 teaspoon of whole cloves
1 teaspoon of whole coriander
1 teaspoon of whole allspice
1 star anise
1/2 cup of boiling water
4 apples, peeled, cored and chopped
1/4 cup of dark brown sugar
juice of half a lemon
1 teaspoon of ground cinnamon
INSTRUCTIONS
Combine all the spices except for the cinnamon into a small bowl. Add the boiling water and let spices steep for 15 minutes or longer for a more robust flavour . Strain. Reserve liquid, discard spices.
Place the apples in a medium-sized saucepan and add the brown sugar, lemon juice, spiced liquid and ground cinnamon. Stir together and cook on medium for 15 minutes, stirring occasionally.
When the apples are soft, mash them gently, then cool.
Serve immediately or refrigerate and use within two weeks.

Sometimes you wake up and just want food to be ready to eat.
➡️ It’s tempting to resort to starchy, sugary sweets with empty calories.
But, today I have a sweet, yet low glycemic index and high fiber classic: Organic oatmeal and apple cinnamon cookies!
Healthy rolled oats, walnuts, raisins, almond butter, apples, and more are blended together to make a healthy, satisfying snack you can enjoy all week!

FYI - The following is a rough draft of the video I will be posting on August 2nd.
▶️ INGREDIENT LIST: (12 cookies)
175g Old fashioned rolled oats - 1 + 3/4 cup (Both Regular Rolled Oats and Gluten-free Oats work well)
47g Coconut sugar - 1/4 cup or to taste (OR Palm sugar)
100g Walnuts - 1 cup
70g Raisins - 1/2 cup
125g Smooth Almond butter - 1/2 cup OR Nut butter of choice
1 medium Apple (170g approx.) - chopped
1/4 Teaspoon salt (I have used Pink Himalayan salt)
1/4 Teaspoon baking soda
1 Teaspoon baking powder
1 Teaspoon cinnamon
1 Teaspoon vanilla extract
▶️ METHOD:
Transfer all the ingredients to a food processor and process until it reaches a coarse consistency. Please note that the mixture will be very sticky right now but don’t worry it’s all good.
Line a baking tray with parchment paper and scoop 2 tablespoon of the the mixture on the baking tray. Since the mixture is very sticky at this point, grease your hands with some oil or you can simply flatten it out evenly with a butter knife to 1/2 inch thickness.
Preheat the oven to 350F and bake for about 18 minutes or so. The baking time also depends on the heat of your oven so adjust the baking time accordingly.
Once baked let it cool and then transfer it on to a wire rack so that the cookies do not collect moisture at the bottom and to prevent it from getting soggy. The cookies are very delicate right after it's baked, so let it cool down completely before handling. Store the cookies in an air tight container to prevent it from drying out.
These cookies also freezes well, you can make a back of it and freeze it for later - a grab and go breakfast.
▶️ IMPORTANT TIPS:
- the mixture is suppose to be sticky so grease your hands with some oil or you can simply flatten it out with a butter knife to 1/2 inch thickness
- the baking time depends on the heat of your oven to adjust it accordingly if needed - use your judgement
- some people are not very fond of raisins but it works very well for this recipe. Once the raisins are blended with the other ingredients you wont notice it at all
- the cookies are very delicate right after its baked so let it cool down completely before handling or storing it
- Store the cookies in an air tight container to prevent it from drying out
- these cookies also freezes well so you can make a batch and freeze it for later - a grab and go

INGREDIENTS
½ cup (113g) unsalted butter melted or softened
1 15.25 ounce box cake mix (any flavor; see notes)
2 large eggs
1 ½ cups mix-ins see notes for variations
INSTRUCTIONS
If using softened butter, you’ll need a hand or a stand mixer. If using melted butter, you can use a mixer or do the following by hand.
Place butter, cake mix, and eggs in a large bowl. Stir or mix until combined and no lumps remain. Stir in mix-ins.
Scoop 2-tablespoon balls of cookie dough onto a cookie sheet lined with parchment or silicone baking mats. No need to space them; we are chilling the dough. Chill for at least 30 minutes.
Preheat oven to 350°F. Line a second cookie sheet with parchment or silicone baking mat.
Space cookies 2-inches apart on cookie sheets. Bake for 10-13 minutes, or until they just lose their glossy sheen. These cookies stay puffy and will settle a bit as they cool but don’t become flat.
Immediately after removing from the oven press a few more mix-ins on top for decoration. Cool at least 10 minutes before removing from the cookie sheet.
Store in an airtight container for up to 3 days or freeze for up to 2 months.
