Herring Salad Recipe: Northern German-style!
Here's the recipe and some general instructions.
1). DO NOT USE FLAVORED OR MARINATED HERRING! It is very difficult to find matjes herring (which I prefer for this recipe) in the US and must generally be ordered from an importer. All the herring at Ikea is sweet and seasoned with dill. Do not buy that. You want plain herring that has only salt added. If you buy it in oil, it will be salty, but just drain it and pat it well with paper towels. DO NOT SOAK IT AS YOU WOULD BARREL SALT HERRING! If you use barrel salt herring, make sure that after you desalinate it to a reasonable amount you get most of the water out of it. You cannot make this with waterlogged herring!!!
Fabko.com is where I get my herring, and I prefer Lisner, but Lowell is OK, too. Make sure you get the plain matjes -- not the seasoned one. You have been warned!
Russianfoodusa.com has plain herring in oil. It's OK if it's not matjes. As long as it contains only salt in whatever it comes in. Brine or oil.
Bavariasausage.com has Klades Holman in brine and Haifa in oil. Haifa is good. If you get the Klades Holman you will have to soak the herring, and I suggest you go for the oil-packed if you don't know your way around salt herring.

Here's the recipe, but please alter to your taste.
I order herring in oil by the kilo, which yields 1-3/4 pounds herring for this recipe. However, it is easy to make half if you purchase several smaller packages.
Renate's Herring Salad (Heringssalat)
1-3/4 pound herring fillets, sliced in 1-1/4 inch slices (see notes above)
4 small or 2 large Granny Smith or other tart apples, cored, peeled
and cut into 1/4-inch or so dice. Toss them in a sprinkle of lemon juice
to keep from browning.
2 dill pickles, preferably fermented in brine and not vinegar pickles,
cut into 1/4 inch or so dice
2 tablespoons capers with brine
1 medium red or white sweet onion, diced and rinsed under water
and dried
1/2 teaspoon finely ground black pepper
1/2 cup good mayonnaise (not Miracle Whip or any sweet mayo)
1/4 cup (or more) heavy cream or half-and-half
1). Gently fold herring, apple, pickle, capers and onion together in non-reactive bowl.
2). Make dressing. Whisk mayo, cream or half-and-half and pepper in small bowl. If too thick, add more cream or half and half. It should be a bit runny.
3). Fold dressing into herring mixture--gently.
4). Cover and let sit in fridge for a couple of hekours. It will last up to three days.
Serve with hot, steamed or boiled potatoes, good rye bread or crispy rolls.
If you don't like pickles, leave them out.
If you want to try a variant, add cubed cooked red beets (not pickled!) and/or chopped boiled eggs.

Etwa 1 Esslöffel Olivenöl
Salz
Schwarzer Pfeffer
Die Konsistenz sollte feucht und krümelig sein (aber nicht matschig)
Tomate
Oliven
Olivenöl
500-600g Kartoffeln
Pflanzenöl
1 Zwiebel
250 g Champignons
1 Knoblauchzehe
Grüne Zwiebeln und Petersilie

Herring or Haring - is a small fish that is very popular among Dutch people. It is caught in the North Sea and the East Sea (near Denmark) from mid May to mid July.

Here comes a typical spring meal from the North: Matjes Herring in Cream Sauce! The word Matjes comes from the Dutch and it means maiden. It refers to the young virgin herrings that are used for this meal. They have a very soft texture and a mild taste and are usually caught in the springtime.
