Que onda BBQ LOVERS! Welcome to Arnie’s Cafe & Grill, where I’m cooking up my favorite mexican and tex mex recipes from my old restaurant menu.
In this video we are going to cook a HAMBURGESA SMASHBURGER using the Made In Carbon Steel Griddle and Grill Press.
Now we all know what a smashburger is – which is usually a couple of patties smashed down flat into the griddle so that they develop that awesome maillard reaction char before being topped with delicious cheese. Add a little condiment of your choice, maybe some onions or pickles and that’s it!
But a hamburgesa is different! Here on the border in the nine five six these are usually served with a slice of ham, strips of bacon, guacamole and jalapeños – with of course your standard veggies.
So in this video, we are going to take the BEST of both worlds and combine them into a HAMBURGESA SMASHBURGER.
We're going to use some brisket ground beef, seasoned up with APC OG and topped with slices of American cheese.
And for our other ingredients we are using lettuce, tomato, pickles, mustard, a slather of guacamole, a slice of ham and crispy bacon.
All of this together to make the most amazing bite on the border. So let’s get fired up and cook us a HAMBURGESA SMASHBURGER.

The Real New Yorker’s Sandwich
Forget your street cart hot dogs and deli pastrami, the *real* New Yorker’s sandwich is the chopped cheese, a beautiful conglomeration of chopped ground beef, melted cheese and secret seasoning, all served on a hero or a roll. The birthplace of the chopped cheese is Hajji’s Deli in Harlem, where Salah has been managing the joint for the past 15 years. Inspired by an Arabic dish, the chopped cheese has now become a New York staple, with fans in everyone from Jay-Z to Cam’ron.
