How To make Scotch Broth(Pressure Cooked)
2 1/2 pounds lamb neck
* see note
8 cups cold water
3/4 teaspoon salt :
or to taste
1/2 cup pearl barley picked over & rinsed
1/2 cup split pease :
picked over & rinsed
2 medium leeks, white only thinly sliced
1 large onion :
coarsely chopped
2 large carrots, scrubbed or peeled -- cut in 3-4 chunks
2 stalks celery -- finely chopped
2 bay leaves
4 sprigs parsley (or 5)
serves 8
*cut lamb into 2" pieces and trim of excess fat
Rinse the lamb and set it in the bottom of the cooker. Add the water and slowl y bring to the boil. Skim off any solid white skum that forms on the surface. Add the salt and skim again. Add the remaining ingredients. Lock the lid in place and over high heat bring to high pressure. Adjust the heat to maintain h igh pressure and cook for 20 minutes. Let the pressure drop naturally or use a quick release method. Remove the lid, tilting it away from you to allow any e xcess steam to escape. Remove the bay leaves and parsley. Add salt if desired .
Author's Notes: Try to prepare this soup a day in advance so that, before serv ing, you can remove the fat that congeals on the surface.
Variations: some versions add chunks of rutabaga and chopped cabbage

Here's a super easy recipe for Scotch Broth! This has to be the most classic Scottish soup there is....and it's super tasty too :) It takes a few hours to cook, but well worth it! Remember if you're not using a slow cooker you'll need to soak your peas in cold water overnight....or at least 5 hours, or they'll be hard :) Here's what you'll need if you want to give it a go....

Shopping List:
120g Dried peas
100g Pearl barley
3.5 Pints of Lamb or mutton sock
250g Diced Carrots
250g Diced Turnip
1 Large onion or two medium Onions diced
A teaspoon of salt & a half teaspoon of pepper (or as much as you like :)
You can also add a chopped leek or celery if you like…..I like it quite simple so that’s why Ive left them out!

SCOTCH BROTH
Made using fresh veg from @thefreshfruitshop ???????? & meat bought from @donald_butchers ???? I use boiling beef in my recipe - always have - because it’s what my Gran used. Traditionally I think it’s lamb bones (hence the lamb stock), so use lamb ribs from the butcher if you prefer ????????
This makes a biiiig portion (plenty for the freezer stash), so just half the volumes if you want to make less or you don’t have a pot big enough ????
Ingredients
- 200g dried broth mix
- 1kg boiling beef (or lamb ribs)
- 1/2 x turnip
- 2 x carrots
- 2 x onions
- 1 x leek
- 2 x medium potatoes
- 2 x bay leaves
- large handful parsley
- 6 x pints water
- 4 x lamb stock cubes
- salt & pepper
Method
1. Measure broth mix and leave to soak overnight (or approx 6-8 hours in cold water), rinse out with water and drain
2. Put your piece of boiling beef into a large soup pot with some oil and start to brown the meat
3. Prepare herbs/veggies: grate carrot, grate turnip, finely chop onions, finely slice leeks and cube peeled potatoes
4. Add veggies into soup pot with 6 x pints water, broth mix and bay leaves
5. Simmer on medium heat for for approx 2 hours
6. Remove boiling beef from pot, allow to cool, remove fat and shred the meat before adding back into pot of soup with chopped parsley
7. Season to taste & serve

Scotch Broth 03
Scotch broth is easy to make and goes a long way. Use ham shank or boiled gammon, but just don't let the peas stick to the bottom.
pressure cooker : thick home made pulse soup in 15 mins ?
can I cook a dried pulse mix in 15 mins in a pressure cooker ?
i.e. thick home made soup in 15 mins ?
pressure cooker used : ASDA GPC201SS-20 (£50 Dec22 ... sometimes £39)
rated 1KW ... but my meter says 1.1KW
I guess all pressure cookers will be similar or more powerful, including Instant Pot.
the base for a thick home made soup. usually it would take me like :
microwave : 5 hours and be harder than started ?
cooker : 5 hours or more ?
slow cooker : dunno. 24 hours ?
normally you should probably soak them overnight.
