1 lb bulk pork sausage 1 14.5 oz can stewed tomatoes
undrained 1 16 oz can kidney beans :
rinsed and drained 1 c uncooked long grain rice 1 c water 2/3 c picante sauce or salsa In a medium skillet, cook and crumble sausage; drain. add remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until rice is tender.

This nutritious skillet meal offers a lot of flexibility--you can use turkey or pork sausage and regular or brown rice to change the fat and fiber content. You can also adjust the heat to what your family prefers depending on whether you use mild, medium, or hot sausage and picante sauce. This recipe serves six people for 91 cents a serving. Each serving has about 269 calories and 11 grams of fat.
Italian Sausage Skillet Dinner

Who doesn't love a simple one-skillet dinner? Love it when a whole meal can be prepared in just one pan? This is the dinner for you. I used leftover lasagna noodles and Italian sausage to make this meal.
1 pound Italian sausage 1/2 cup chopped onions 1/2 cup chopped red bell pepper 10 ounces cooked pasta 1 26 ounce jar of pasta sauce 2 teaspoons Italian seasoning blend 1 cup of shredded mozzarella cheese
Brown sausage in a skillet unit it is cooked through. Slice sausage into bite sized pieces. Saute the onions and red bell pepper in the skillet. If your skillet is dry add additional oil add about two teaspoons of olive oil to saute the vegetables. Cook the vegetables until the onions are translucent. Stir in cooked pasta, add pasta sauce and add Italian seasoning blend. Stir in Italian sausage. Top with cheese.
If you skillet is oven proof you can pop it under the broiler for a couple of minutes and let the cheese brown. You can garnish the top with chopped basil or chopped parsley.
