How To make Salsa Cubano Barbecue Sauce

white onion, chopped

garlic cloves, chopped

sour orange juice OR 1/3 c lime juice
1/2
teaspoon
oregano
1/2
teaspoon
cummin seeds
1/4
teaspoon
salt
1/2
cup
water
Directions:
Put onions, garlic, orange juice (or lime juice) and water in a blender. Set blender on "liquify" setting and process. Crush all dry ingredients together and add them to blender. Process for one minute more.
Marinate meat (chicken, beef, pork or fish) for at least one hour in mixture. It is better to marinate meats overnight. Brush meat frequently with the sauce while cooking. Makes 2 cups.

**INGREDIENTES**
: pasta de guayaba
(guava paste)
: mostaza (mustard)
: salsa soja (soy sauce)
: vinagre de manzana
(apple cider vinegar)
: cebolla seca (dry onion)
: pasta de tomate
(tomatoe paste)
: sal, pimiente y ajo
(salt, pepper & garlic)
: jugo de limon
(lemon juice)
jengibre (ginger)
Parece complicado por la cantidad de ingredientes pero es muy sencillo. En una olla echamos 3/4 de taza de agua y ya caliente le añadimos todos los ingredientes (todas las medidas estan descritas en el video las que no son al gusto) dejamos cocinar por lo menos 10 minutos o hasta que se disuelva bien la pasta de guayaba y la de tomate (opcional pasarla por un blender para suavisarla) y ya estara lista una sabrosa???? salsa BBQ de Guayaba

Guava BBQ Sauce Recipe by Chef Jason Peru
Yield: 28 oz/3 1/2 cups
INGREDIENTS
2 Tbsp of Vegetable Oil
¼ Cup Minced Onions
2 Cloves of Garlic (minced)
4 oz Angostura 1919 Dark Rum
8 oz Guava Jam
16 oz Smoky BBQ Sauce
1 Tsp Cumin Powder
1 Tsp Paprika Powder
1 Tsp Chili Powder
8 Dashes of ANGOSTURA® orange bitters
4 Dashes of ANGOSTURA® aromatic bitters
1 ¼ Tsp Salt
¾ Tsp Black Pepper
METHOD
1. Place a medium sauce pan over high heat and add the vegetable oil.
2. When heated, add the onion and garlic and sauté for 3 minutes.
3. Carefully add the dark rum to flambé, tilting the pot away from your face to prevent burns.
4. When flame dies down, stir gently and immediately add the guava jam.
5. Reduce heat to medium and cook until the jam has melted down in consistency.
6. Add the bbq sauce, cumin, paprika and chili powders. Stir to combine and let simmer for 8 to 10 minutes stirring occasionally to prevent aggressive bubbles from breaking the surface.
7. Add the bitters and stir. Taste and season with salt and black pepper to your desire.
8. Remove from stove and use this sauce as your basting bbq sauce for grilling meats, also to baste pork, chicken, beef and seafood when baking in the oven or even when using a charcoal pit.

BBQ sauce can be an excellent way to finish off food that is cooked on the smoker or simply served up as a sauce for other grilled foods as well. The sauce in general has a very long rich history and BBQ specifically sauce originally was more of a butter sauce that included cayenne and fresh herbs. The earliest recordings believe African American slaves and Creoles were the first to introduce the sauce to the new Western world and for good reason considering their history with smoked meats.
