How To make Reuben's Juicy Relative
1 lb Bulk pork sausage
1 cn Sauerkraut, (14 oz), drained
2 ts Caraway seeds
2 tb Brown sugar
2 tb Spicy brown mustard
2 Rye bagels, toasted
1/4 c Thousand island dressing
4 Swiss cheese slices
Form sausage into 4 patties. Fry patties in skillet over medium heat until cooked & brown, about 5 minutes on each side. Drain on paper toweling. Heat oven to 375 degrees F. Mix sauerkraut, caraway seeds, brown sugar & mustard in small saucepan; heat until hot. Spread bagels with dressing, spoon half the sauerkraut on bagels; top with sausage patties, remaining sauerkraut & cheese. Wrap each bagel in aluminum foil. Bake 20 minutes. Unwrap; serve hot.

Offal is having a big moment in the food world, which prompted Guillermo (a self proclaimed offal lover) to visit chef Jeremy Salamon (one of NYC's youngest LGBTQ rising star chefs) at The Eddy, right on time to celebrate Pride month. Jeremy's critically-appraised, mostly Hungarian menu, was inspired by his grandmother’s recipes. Offal is a staple of Eastern European cuisines, so it made sense to make delicious pastrami beef tongue. Let's tongue for Pride!

Pastrami Tongue Recipe
Ingredients for brine:
2 2⁄3 cups Salt
2 cups Sugar
3 Bay Leaves
1 head Garlic, crushed
2⁄3 ounce pink curing salt
1 Beef Tongue, 5 pounds
For Brine: Combine first 4 ingredients in a large pot with 1 gallon of water. Bring to a boil then chill. Once cold, stir in the curing salt and add the tongue. Refrigerate for 4 days.
After 4 days, pull the tongue from the brine and submerge in another pot filled with cold water. Bring the water to a boil and cook the tongue until soft when pierced with a fork, 3-4 hours. While the tongue is still warm peel off the outer layer of the tongue skin.
For the Spice:
2 Tablespoons Allspice Berries 2 Tablespoons Coriander Seeds 2 Tablespoons Fennel Seeds 2 Tablespoons Yellow Mustard Seeds 2 Tablespoons Red Chile Flakes 2 Tablespoons Red Peppercorns 2 Tablespoons Black Peppercorns
Toast the Coriander and Fennel Seeds until fragrant. Combine with the remainder of the spices and grind in a blender.
Once the tongue is peeled, portion it into rough 6 oz steaks. Liberally dress the portioned tongue in the pastrami spice. I like to let the tongue air-dry on a rack for a day in the fridge to help ensure a nice dry crust.
* Smoke tongue at 225F for 3 hours until tongue is tender and maintains a crispy exterior.

Rustic Bread Recipe | How To Make Bread Crust Crispy + Homemade Butter + Roasted Bone Marrow
In this video, I will show you a simple and delicious rustic bread recipe, how to make bread crust crispy, in other words, crispy crust on bread, along with two deliciously spreadable fatty spreads (homemade butter and roasted bone marrow) to line your arteries with love.
Most of us common folk spend our lives sitting around waiting for something to happen, while time slips away at increasingly alarming rates of speed. Well, with this homemade crispy crust on bread recipe, your waiting will actually result in something. Nourishment for your body and mind, so you can keep on waiting for something else.

Homemade Crispy Crust on Bread Recipe:
- 4 cups all-purpose flour
- 2 hefty pinches of salt
- 2 cups, liquid of your choosing. (I recommend whey, milk or stock)
- 7g/1 packet active dry yeast
-1tbsp of sugar
Method:
- Bring your liquid to 98f/36c
- Stir in 1tbsp of sugar
- Stir in yeast
- Wait 10 min or until yeast blooms
- Measure out 4 cups All-Purpose flour and whisk in 2 hefty pinches of salt
- Add in yeasty liquid and mix until thoroughly combined
- Cover with a clean kitchen towel and let rest for 1.5 hrs
- Oil your hands and spank to deflate, then fold the dough in on itself
- Cover again with a kitchen towel and repeat 3x
- Drizzle dough with oil (optional) and let rest in the fridge overnight
- Remove from fridge, rest for an hour (so it can come up to room temperature) while preheating your oven to 425f/210c with your pot inside
- Place your dough in the hot pot and score the surface with a sharp knife.
- Cook in the oven for 30 min with lid on
- Remove lid and cook for another 15 min, or until the crust is browned to your liking
- Remove from the pot onto a wire rack and let sit for around an hour or until no longer hot
Homemade Butter Recipe:
- Pour 1 cup of cream into a food processor or blender
- Blend for about 5 minutes or until the butter fats separate
- Squeeze out as much buttermilk as you can from the butter
- Refrigerate
