How To make Red Bell Pepper and Cheddar Cheese Spread
1/2 sm Onion, Quartered
3 lg Cloves Garlic, Peeled
2 ts Olive Oil
2 Red Bell Peppers
1 1/2 c Tillamook Cheddar Cheese, Or
Other Sharp Cheddar, Grated And Packed To Measure ds Cayenne Pepper 2 tb Chives, Fresh, Chopped
Preheat oven to 375?F. Place onion and garlic in small baking dish. Drizzle with oil. Bake until soft, stirring occasionally, about 50 minutes. Cool. Meanwhile, char peppers over gas flame or under broiler until blackened on all sides. Cool 10 minutes. Peel and seed peppers; pat dry. Place all ingredients except chives in processor. Puree until almost smooth. Transfer to bowl. Stir in chives. Season with salt and pepper. Cover and refrigerate at least 2 hours. (Can be prepared 1 day ahead.) Makes about 1-1/2 cups. Betty's White Cheddar Cheese Sandwich with Red & Yellow Bell Peppers
Betty demonstrates how to make a White Cheddar Cheese Sandwich with Red and Yellow Bell Peppers. This sandwich is my version of the sandwich I ordered in our recent visit to Jonathan's at Gratz Park in Lexington, Kentucky. (You can see the real version in the video of our trip to Jonathan's.) This is a delightful blend of white Cheddar cheese, red and yellow bell peppers, and mayonnaise inside warm, toasted bread and dressed with lettuce and tomato.
White Cheddar Cheese Sandwich with Red & Yellow Bell Peppers
1 cup shredded white Cheddar cheese
¼ cup finely-chopped red bell pepper
¼ cup finely-chopped yellow bell pepper
½ cup mayonnaise
French or Italian bread, sliced about 5/8-inch thick and toasted
butter for toasting bread
fresh outer iceberg lettuce leaves
fresh thin-sliced tomatoes
Prepare your bread by slicing off two slices of Italian or French bread per sandwich. Spread a very small amount of butter on both sides of each bread slice. Place the slices in a skillet over medium heat and toast until browned and crunchy. Remove from heat and let cool a bit while you prepare your filling. In a small mixing bowl, add 1 cup shredded white Cheddar cheese, ¼ cup finely-chopped red bell pepper, ¼ cup finely-chopped yellow bell pepper, and ½ cup mayonnaise. Stir until well blended. Now, choose two slices of bread that match in size and spread the inner side of one of the slices with a generous amount of the Cheddar cheese filling. Top with 2 thin slices of tomato and 2 outer leaves of iceberg lettuce. Close up the sandwich, with the matching slice of bread, slice diagonally, and place on a serving plate. This sandwich is great with a dill pickle spear and potato salad alongside! I hope you enjoy it! --Betty

High Protein Chipotle Cheese Spread ! Super yummy & Healthy #easycooking
Chipotle Cheese Spread ! High protein & super healthy. 1 spoon of 20 g is about 4.5 protein
The reason why I love to make this at home is because I exactly know what all has gone into it. It tastes light , cheesy & is perfect for a cheese lover like me who wants to be healthy.
You need only 10 to 15 mins to make this !
1 litre Milk
2 to 3 tbsp Lime Juice + 2 tbsp water or you can use vinegar too
2 tsp Salt (this add to the flavour & will eventually be drained out)
This will give about 180 to 200 g Chenna (Don’t over squeeze & make like Paneer)
150 g Hung curd (300 g curd which is hung)
1 cheese cube
A little more salt
3 Kashmiri Red Chillies, soaked
2 to 3 tbsp Chopped Olives
2 to 3 tbsp Chopped Jalapenos
2 to 3 tbsp Chopped Sun Dried Tomatoes
1/2 tsp crushed oregano
1 tbsp chopped coriander
1 tbsp Crispy Garlic
A little black pepper

- Just make sure the curd is hung well & so is the chenna. We don’t it to be super liquidy
- Store in an Air Tight Container in the fridge
- Salt here will act as a preservative & this will give you about 350 g Cheese spread

Ingredients
1 cup Mayonnaise
1 teaspoon lemon juice ( I also grate some lemon zest in as well)
1/2 block cream cheese (4 ounces)
2 cups grated pepper-jack cheese
2 cups grated sharp cheddar cheese
1 (4-ounce) jar pimentos, drained and chopped small
1/4 teaspoon cayenne pepper
1/2 teaspoon Worcestershire sauce
Salt and freshly ground black pepper
1/4 teaspoon of garlic powder
pinch of red pepper flakes (I like it spicy, but you can leave out)
1/4 teaspoon hot pepper sauce(again, I like it spicy, but you can leave out)
This is the easiest thing to put together, just combine all the ingredients in a large bowl and mix well with a wooden spoon. Then spread on your bread or crackers and enjoy.
