How To make Ratatouille Topped Chicken
4 Chicken Breasts *
1 tb Olive Oil
1 md Onion, Chopped
2 Cloves Garlic, Minced
1/2 Red Bell Pepper, Chopped
1/2 Green Bell Pepper, Chopped
1 sm Eggplant, Cubed
14 oz Chopped Canned Tomatoes
1 Yellow Squash, Sliced
1 Zucchini, Sliced
2 tb Fresh Oregano
Pepper To Taste 1/2 lb Favorite Pasta
* Chicken breasts should be boned and skinned. ~------------------------------------------------------------------------- Coat a nonstick skillet with olive oil. Add onions, garlic, peppers and eggplant. Saut 10 minutes until soft. Add remaining ingredients. Cover and simmer for 15 minutes. Preheat oven to 350F. While sauce is simmering, brown chicken in skillet sprayed with olive oil cooking spray for about 3 minutes on each side. Place in baking dish, set aside and keep warm. Cover chicken with sauce, cover with foil and bake for 15 minutes. Serve over your favorite pasta. For vegetarian dish omit chicken and serve over rice or pasta.

This is the easiest dish so far just put everything in the oven and wait :) Just moved house this weekend so my next video will be in my new kitchen!

Ingredients
1 Pepper, chopped
1 Onion, quartered
1 Courgette, chopped
1 Aubergine, chopped
3 Garlic Cloves
3 Breasts of Chicken
Olive Oil
3 Knobs of Butter
Salt, Pepper & herbs (Italian seasoning)
How To
• Preheat oven to 200 degrees
• Put all of the vegetable in a baking tray
• Generously pour olive oil over all of the vegetables and sprinkle salt, pepper and herbs over the top. Use your hands to make sure that everything has been covered in the oil
• Oil the chicken and season also
• Place on top of the vegetables with the knobs of butter
• Place in the oven for 35 minutes or until the chicken is golden brown and the vegetable are soft
• SERVE!

Ingredients
3 Leeks
1 onion
2 celery stalks
3 garlic cloves
3 potatoes
5 cups vegetable broth
Few fresh thyme springs
1 cup heavy cream
1 tbsp salt
2 tsp fresh cracked black pepper
Old bread for croutons
Chives for garnish
Clean veggies, cut, and cook with 1 tbsp olive oil for about 10 min. Add potatoes, thyme, and broth. Cook 15 more min. Remove thyme and pure the soup. Add heavy cream salt and black pepper, and cook on low for 5 more minutes. To make croutons simply air fry or bake them for 10-15 min until golden. Garnish with chives before serve. Great recipe!
