Mexican Breakfast Timelapse
Mexican Breakfast - Gluten Free
INGREDIENTS (SERVES 2):
Chorizo
Sausage (Heck sausages or similar)
Bacon
Sweet Potato
Black Beans
Tomatoes (Either 2 x regular tomatoes or handful of baby plum tomatoes)
Mushrooms
Eggs
Cheese (Mild)
Chopped Tomatoes
Worcestershire Sauce
Paprika
Coriander (Fresh or jar)
Garam Massala (Mild)
Salt
Pepper
Olive Oil
2 x skillet pans, mini casserole dishes or similar
DIRECTIONS:
Dice 2 x sweet potatoes, place in roasting tin and cover in olive oil add a paprika, salt and pepper to taste and roast for approximately 20 minutes on a high temperature (approx. 250 degrees centigrade)
Keep some space in the oven for keeping all ingredients warm once cooked
Quarter the mushrooms and halve the tomatoes and place in pan with a knob of butter, salt and pepper to taste and cook on a medium heat until the tomatoes are slightly browned and the mushrooms are cooked
At the same time, drain a tin of black beans and place in a pan, add ¼ tin chopped tomatoes, worcestershire sauce, coriander, garam masala, chilli powder, salt and pepper according to taste, simmer to reduce the liquid and cook in the flavor
As you carry out the two above steps, get your juggling hat on, because you also need to be frying up or grilling 2 sausages, 2 rashers of bacon and some slices or diced chorizo, again using a medium heat
As the ingredients are cooked keep them warm in the oven if possible and get your skillet pans or mini casserole dishes in the oven to warm them through
Lastly fry or bake the egg. I fry them to make best use of the space I have – make sure they are flipped and cooked through, unless you prefer them runny, however the Mexican breakfast recipe calls for baked eggs
Grate your cheese and put it to one side
Now you are ready to stack your Mexican breakfast (see time lapse video). Remove your skillet pan/dishes from the oven and make sure all your ingredients are available on the surface to distribute. Start with your sweet potatoes, layering in sausage, bacon, chorizo, black beans and tomatoes and mushrooms. Place your egg on the top of the breakfast and a sprinkle of cheese to taste. Place under the grill to finish and serve warm – remind your guest not to touch the dish your serving the breakfast in – it will be hot!

This Pie Has Smoked Bacon, Sausage, Egg and Tomato. All wrapped up in a Shortcrust Pastry and makes a delicious breakfast.
What You Need :
4 Rashers of Smoked Thick Cut Bacon
4 Sausages
500g of Shortcrust Pastry
6 Eggs + 1 Beaten For Glazing
Baby Plum Tomatoes ( Chopped )
Fresh Chives ( Chopped )
A 20cm Quiche Dish or Something Similar

Sausage & Bean Bake
Serves 4 -6
Prep time: 20 minutes
Cook time: 50 minutes
100ml olive oil
6 sausages (we used pork, but you can use beef or lamb), sliced
3 streaky bacon rashers, sliced
1 onion, roughly chopped
4 garlic cloves, peeled, roughly sliced
1 capsicum, seeded, roughly chopped
1 zucchini, roughly chopped
1 carrot, peeled, roughly chopped
700ml tomato passata
3 cans beans or peas (we used black-eyed peas, kidney beans and white beans, but you can use whatever you have in the pantry)
½ bunch basil, roughly chopped
½ bunch flat-leaf parsley, roughly chopped
4 rosemary sprigs, roughly chopped
Whole piece of parmesan or mozzarella, to serve
Green salad, to serve
1 Preheat oven to 200°C.
2 On stove, heat a large pot with olive oil. Cook the sausages and bacon until golden brown.
3 Add the onion, garlic, capsicum, zucchini and carrot and cook for 5 minutes.
4 Add the passata and bring to the boil.
5 Add beans or peas, basil, parsley and rosemary.
6 Bring to the boil. Pour into a baking dish. Grate a generous amount of parmesan or mozzarella over the sausage mixture in the dish.
7 Bake for 40 minutes until the cheese is crisp and golden.
8 Serve with salad.

Didn't think frying bacon could get any better? We prove it can.
Here’s a simple way how to make bacon that’s crisp and tender instead of dry and crumbly. Make crispy bacon with no risk of overcooking. Bacon cooked in water? It works!
Place the bacon (in strips or cut into pieces) and just enough water to cover it in a skillet over high heat. When the water reaches a boil, lower the heat to medium. Once all of the water has simmered away, turn down the heat to medium-low and continue cooking until the bacon is crisp and well browned. When we tried this method, the meat plumped up as it cooked instead of shriveling, leaving the bacon pleasantly crisp yet moist, not tough or brittle.
The addition of water keeps the initial cooking temperature low and gentle, so the meat retains its moisture and stays tender. By the time the water reaches its boiling point (212 degrees), the bacon fat is almost completely rendered, so you’re also much less likely to burn the meat while waiting for the fat to cook off.
