We challenged chefs of three different skill levels - amateur Onika, home cook Daniel, and professional chef Frank Proto from The Institute Of Culinary Education - to prepare a piping hot paella (yes, Frank finally gets to make paella!) Once each level of chef had served up their creation, we asked expert food scientist Rose to explain the choices each made along the way - both good and bad. Which paella would you pick?

Paella is – next to tortilla and tapas – Spain’s internationally most well-known dish. The original recipe comes from Valencia, which is located at the Spanish east coast. While paella is eaten all over the world, many people don’t know about its origins and the secrets that come with it.
For example, paella takes its name from the large, flat pan which is also known as paella. Then, there’s the special rice that Valencians use to cook paella. And most important: never mix fish and meat if you want to eat an authentic paella!

1 cup scallops, fresh or frozen, thawed if using frozen
1¾ cups chicken or seafood broth
1½ cups long grain rice
½ cup white wine
3 oz yellow onions, chopped
4 oz bell peppers of your choice, chopped

1 cup green peas, frozen and thawed
1 tsp ground turmeric
½ tsp smoked paprika

¼ cup olive oil
salt and ground black pepper to taste
To serve:

1 tbsp aioli, per serving if using
¼ tsp parsley, chopped, per serving
⬇️ How to make Crockpot Seafood Paella ⬇️
0:10 In a wide skillet, heat up the olive oil. Add the sausage and saute for roughly 5 to 7 minutes until caramelized. Set aside.
0:30 Using the same skillet with oil, sear the scallops and shrimps separately for roughly 2 to 3 minutes per side, until golden on both sides. Set aside.
1:11 Still using the same skillet with oil, add the mussels or clams and saute briefly for roughly 3 to 5 minutes, just until they open up if using fresh.
1:24 Deglaze with white wine and reduce briefly, then set aside this together with the other seafood.
1:37 Add the rice, onion, bell pepper, tomatoes, broth, and all the spices to the slow-cooker. Mix to combine.
2:10 Cover and cook on High for 3½ hours.
2:16 Add the peas to the slow cooker and cook for an additional 30 minutes.
2:29 Add the seafood and chorizo into the crockpot during the last 15 minutes of cooking. Stir to combine.
3:06 Once the paella is cooked, season to taste with salt and pepper. Adjust accordingly.
3:26 Portion the paella and drizzle with aioli, if preferred. Garnish with parsley and serve with a lemon wedge.
