How To make Puerto Rican Beef Stew
3 tablespoons vegetable oil
1 1/2 pounds stewing beef -- cut into 1 1/2-inch
pieces 1 large onion :
chopped
3 large garlic cloves chopped
1 tablespoon chopped fresh parsley
4 fresh thyme sprigs :
or 1 teaspoon
-- dried, crumbled 4 bay leaves
2 tablespoons all purpose-flour
2 cans beef broth -- (14 1/2-ounce)
2 cups dry red wine
4 large potatoes cut lengthwise into
:
quarters 3 large carrots -- cut into 3/4-inch
pieces 1/2 pound green beans :
trimmed halved
chopped fresh parsley
Heat oil in heavy large pot or Dutch oven over high heat. Add beef in batches and brown. Using slotted spoon, transfer beef to bowl. Add onion and garlic t o pot and saute 5 minutes. Add parsley, thyme, bay leaves and flour. Stir 2 m inutes. Gradually mix in broth and wine. Return beef to pot and bring mixture to boil. Reduce heat to medium-low and simmer uncovered 45 minutes.
Add potatoes and carrots to stew. Simmer until meat and vegetables are tender, stirring occasionally, about 30 minutes. Add green beans and simmer until bea ns are tender and gravy is slightly thickened, about 10 minutes. Transfer stew to large bowl. Garnish with chopped parsley and serve.

1 8oz can of tomato sauce
1 packet of Sazon Knorr or Goya
3 large potatoes diced
1 cup of carrots
2 bay leaves
4 garlic cloves
1 handful of fresh cilantro
1/4 cup of olives
4 cubes of sofrito or 4 tablespoons You can watch me make sofrito here:
1 teaspoon of cumin and oregano
Adobo Goya to taste
2 tablespoons all purpose flour
3-4 cups of water
2-3 tablespoons of canola oil

Puerto Rican Beef Stew Ingredients:
Meat Marinade for 2 pounds of beef stew meat or cut of beef choice cubed:
1. 2 tablespoons of white vinegar
2. 1 teaspoon of adobo
3. 1 teaspoon of garlic powder
4. 1 teaspoon of onion powder
5. 1 teaspoon of black pepper
6. 1/2 teaspoon of oregano
7. 2 tablespoons of all purpose flour
Other Ingredients:
8. 2 tablespoons of olive oil
9. 1/2 large chopped onion
10. 1 tablespoon of minced garlic
11. 3 tablespoons of sofrito
12. 1.5 tablespoons of green salad olives preferably with pimentos
13. 6 ounces of tomato sauce
14. 2 tablespoons of finely chopped cilantro
15. 1 envelope of sazon seasoning
16. 3 cups of chicken stock
17. 1 cup of water
18. 2 bay leaves
19. 3/4 cup of cut carrots
20. 1.5 cups of cut and largely cubed potatoes
Red Beans Ingredients:
1. 2 tablespoons of olive oil
2. 6-8 ounces of smoked ham steak (optional)
3. 1/2 medium onion chopped
4. 1 teaspoon of minced garlic
5. 3 tablespoons of sofrito
6. 5 ounces of tomato sauce
7. 2 tablespoons of fresh chopped cilantro
8. 1.5 tablespoons of green salad olives with pimentos preferably
9. 1 envelope of sazon seasoning
10. 2 15 ounce cans of red kidney beans or beans of your choice
11. 4 cups of chicken stock
12 1 cup of water (optional if you like soupier beans. Do not add the water if you like thicker beans)
*You can smash a few beans with a masher to thicken your beans as well
White Rice:
1. 2.5 tablespoons of olive oil
2. 2 cups of rice
3. 2.5 cups of water
4. 1 teaspoon of salt
