How To make Pineapple Vegetarian Fried Rice
4 tb Vegetable oil
1 ea Yellow onion, finely chopped
3 ea Garlic cloves, chopped
1 c Carrots, chopped
1 c Green beansm chopped
1 c Pineapple chunks
3 c Rice, cooked
1 tb Tomato ketchup
1 ts Salt
1 ea Cucumber, thinly sliced
4 tb Green onion, chopped
4 tb Cilantro leaves, chopped
In a wok, heat the oil over medium heat & stir-fry the onion & garlic until golden brown. Add the carrots & green beans & stir-fry for 2 minutes longer Add the pineapple, rice, ketchup & salt. Mix well & stir-fry for another 3 minutes. Arrange the cucumber around the serving platter. Pour the rice into the centre. Garnish with green onion & fresh cilantro leaves.

* 2 ½ cups rice
* ½ cup water
* ½ cup pineapple juice
* ½ cup chicken stock
* 1 cup water
* 1 teaspoon salt
* 3 tablespoons oil
* 500g shrimp
(seasoned with 1 teaspoon spice mix)
spice mix:
*½ teaspoon each of salt, garlic powder, onion powder, pepper.

* 2 carrots
* 8 string beans
* ½ red bell pepper
* 2/2 green bell pepper
* Spicy scotch bonnet pepper(atarodo)
* Bunch scallions
(Veggies seasoned with 1 teaspoon spice mix)
Spice mix
* 1 teaspoon each of garlic powder, onion powder, bouillon cube, paprika
½ teaspoon salt.

ingredients:
1. Pineapple - 1/2 Cup (Cubes)
2. Pineapple juice : 2 - Tbsp(optional)
3. carrot: 1/4 Cup (Sliced)
4. Green Peas:1/4 Cup
5. beans: 2- tbsp ( Sliced)
6. Paneer( Cottage cheese)/Tofu: 9- 10 (Cubes)
7. Raisins,Cashews : 2 - Tbsp
8. Ginger - Garlic - 1 Tbsp (Chopped)
9. Onions - 1 Medium size ( Sliced)
10. Oil: 3 Tbsp
11. Salt to taste
12. Black Pepper: 1/2- tsp
13. Soy Sauce:1 Tbsp
14. Spring Onions:1- Tbsp( Chopped)
15. Boiled Rice: 1.5 Cups
Method:
1. On a hot pan add oil( 2 tbsp) .
2. Add Tofu/ Paneer ( Cottage cheese) and fry till brown and keep aside.
3. In a same pan add 1- Tbsp oil. Add cashews and Raisins Saute for a minute.
4. Add Ginger-Garlic chopped and Saute for a minutes( till raw smell leaves).
5. Add Sliced onions and saute for a minute.
6. Add Carrots(Sliced),Beans( Sliced) and green peas.Fry till soft.
7. Add Pineapple cubes and Mix well.Saute for 30 seconds.
8. Add Salt,Black pepper,Soy sauce and fried Tofu / Paneer ( Cottage cheese) Cubes and mix gently.
9. Add Boiled Rice and Pineapple Juice(Optional) and Mix well.
10. Finally add some Spring onions ( Chopped) and Cover the lid and Cook on very low flame for 2- minutes.
11. After 2 - minutes off the flame , open the lid and mix once.Serve hot.
