The BEST and EASIEST Hawaiian Banana Bread Recipe - Steph’s Stove
Hawaiian Banana Bread
2 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
2 teaspoons vanilla extract
1 cup chopped pecans
3 large eggs
1 ½ cups oil
2 cups ripe bananas
1 - 8 oz. can crushed pineapple (drained)
Preheat oven to 350°
In a large mixing bowl combine the dry ingredients: flour, sugar, baking soda, salt and cinnamon. Mix together gently to incorporate using a silicone spatula. Add pecans and blend into the dry mixture.
In a separate bowl combine the wet ingredients: bananas (mashed), oil, pineapple (drained), and vanilla. Mix together by hand to incorporate all ingredients.
Add the wet ingredients to the dry ingredients and mix until all ingredients are combined.
Spray two loaf pans or one loaf pan and one mini bundt pan with baking spray.
Even distribute the batter and bake for approximately 1 hour or until a toothpick inserted in the center comes out clean. ** Begin checking at 45 minutes. If the tops are getting browned too quickly, cover with aluminum foil for remaining baking time.
Allow to cool completely before removing from the pan. Enjoy!

I show you how to make the most delicious bread I may have ever made. Pineapple, coconut and macadamia nuts? How could you go wrong?!
People allergic to nuts: Do not add the nuts. People who do not like coconut: Leave it out. People who don't like pineapple: Leave it out (and why did you click on this if you don't like pineapple!!). Needless to say, in almost any dish with nuts--they can be left out if you have allergies.
I made four different breads to take away. I did get to taste each one. This one, I think, may have been my favorite. Mother (who is doing well, thanks) liked this one as well. Scott bit into this and made yummy noises the whole way through. Needless to say, some time today, I am making us a loaf for ourselves and one for a friend who came and did us a huge favor on Wednesday.

3 large eggs
1/2 cup milk
1 teaspoon vanilla extract
1 can (8 ounces) crushed pineapple, undrained
3/4 cup sugar
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
6 tablespoons melted butter
1 cup grated coconut, or use flaked
3/4 cup chopped macadamia nuts, divided
Cinnamon sugar, for topping
Preparation:
Heat oven to 350°. Grease and flour a 9x5x3-inch loaf pan.
In a mixing bowl, beat the eggs lightly; beat in the milk, vanilla, pineapple, and sugar. Combine the flour, baking powder, salt, and baking soda. Stir into the first mixture until moistened. Stir in the butter, coconut, and all but 1 to 2 tablespoons of the chopped macadamia nuts, stirring just until well blended. Sprinkle with 1 to 2 tablespoons of reserved macadamia nuts and sprinkle with a cinnamon-sugar mixture.
Spoon the batter into the prepared pan. Bake for 55 to 65 minutes, until a toothpick comes out clean when inserted in the center.
Cool in the pan. Remove and wrap in foil. If freezing, seal the wrapped bread in a freezer bag.

Pineapple Nut Quick Bread
Ingredients;
1 3/4 cups all purpose flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/4 cup brown sugar
3 tbs soft butter or margarine
2 eggs
3/4 cup chopped macadamia nuts
1 cup (8 oz can) crushed pineapple - do not drain
Directions:
Preheat oven to 350 degrees.
Place flour, baking powder, baking soda, salt, and brown sugar in a large bowl. Mix together...breaking up all clumps of brown sugar. Add butter and mix in making sure there are no clumps of butter.
Add eggs and crushed pineapple (with liquid). Stir until all dry ingredients are wet. Spoon into a lightly greased and oiled loaf pan.
Bake for 50 minutes. Allow to cool for about an hour. Run a butter knife around the edge of the loaf. Turn the loaf out onto a plate gently tapping the loaf pan until the bread comes out. Cut with a serrated knife. Enjoy!
