Easy Lemon Garlic Chicken Pasta | One Pot Meal
In today's video we are making a quick and easy chicken pasta recipe. Lemon garlic chicken pasta is a meal that can be made in one pan/pot. It's a great meal for the weeknight or anytime. The combination of lemon and garlic pair beautifully and when you add fresh parmesan, it's just delicious. Enjoy!
One-Pan Lemon Garlic Chicken Pasta
Prep Time 5 minutes
Cook Time 25 minutes
Servings 4 servings
Ingredients
1/4 cup of extra virgin olive oil
1 pound boneless skinless chicken breasts cut into 1 inch chunks
1 teaspoon of kosher salt plus lots of freshly ground black pepper
4 cloves of garlic minced
2 cups of low-sodium chicken broth
1 cup of water
1/2 pound of penne pasta about two cups
1 lemon zested and juiced; juiced lemon should yield about 1/4 cup of lemon juice
1 lemon sliced for garnish
1 cup of freshly shredded parmesan cheese
1 cup of fresh basil leaves
Instructions
Season chicken breasts with one teaspoon of salt and freshly ground black pepper.
Heat olive oil over medium high and brown chicken breast.
Lower heat and add garlic to pan.
Saute garlic and chicken together about one minute.
Then add chicken broth, water and uncooked pasta to pan.
Bring to a boil, then turn heat down to low.
Cook covered on low for about fifteen minutes.
Remove cover and let simmer for about five more minutes until liquid is reduced by half.
Remove from heat and stir in lemon juice, lemon zest, basil, and parmesan cheese.
Season with additional salt and pepper if needed and garnish with lemon slices.

LEMON ASPARAGUS PASTA PRINT RECIPE:
INGREDIENTS
½ pound spaghetti
2 cups sliced asparagus - sliced diagonally on a thin bias
½ cup Parmigiano Reggiano - grated - serve at the table
4 cloves garlic - sliced thin
salt - to taste
¼ teaspoon red pepper flakes - or to taste
Pasta water - reserve at least a cup
½ cup extra virgin olive oil - divided
1 lemon - zested and juiced
¼ cup basil - chiffonade or chopped

Creamy Tuscan Beef Pasta
Ingredients -
1 1/2 Tbsp (30ml) - Extra Virgin Olive Oil or Sun Dried Tomato Oil (this is from the sun-dried tomatoes)
500g (1.1lbs)- Beef Mince (10% Fat)
1 - Brown (Yellow) Onion, Diced
4 - Garlic Cloves
70g (2.4oz) - Sun Dried Tomatoes, Stripped or Chopped
2 1/2 Tbsp - Concentrated Tomato Paste
2 1/2 tsp - Dried Italian Herbs
1 1/2 tsp (4g) - Sweet Paprika
250ml (1 Cup) - Chicken Stock
3/4 Cup - Thickened Cream (Heavy Cream)
350g (12.3oz) - Penne or Pasta of Choice
180g (6.3oz) - Baby Spinach
Salt & Pepper to Taste
Basil to Serve
Parmesan Cheese to Serve
Method -
1. Bring a pot of salted water to a boil and cook the pasta 1 minute less than the instructions. Drain and reserve 1 cup of pasta water.
2. Place a large pan or pot over medium-high heat. Add extra virgin olive oil or sun-dried tomato oil and beef. Let the meat sear for 2 minutes before breaking it up, and cook it for four more minutes or until browned. Season to taste
3. Add onion and cook for 3 minutes, mixing well. Add garlic, sun-dried tomatoes, tomato paste, dried Italian herbs and sweet paprika. Mix well and cook for 2 minutes.
4. Deglaze the pan with chicken stock and cook for 2-3 minutes or until reduced by half. Add the thickened cream, bring it back to a boil, reduce the heat to low, and simmer for 5-6 minutes.
5. Add the baby spinach and drained pasta and mix well, cooking for 2 minutes or until the spinach has wilted and the pasta is coated in the sauce. Check to season and remove from the heat. Serve in bowls and garnish with basil, parmesan cheese and cracked black pepper. Dig in.
