Recipe: Chocolate Peanut Butter Oatmeal No-Bake Cookies flourless and no oven
This is a fast and easy recipe for chocolate oatmeal cookies without flour or baking.
Chocolate Oatmeal No-Bake Cookies
2 cups (400g) sugar
1/4 cup (25g) cocoa powder
1/2 tsp salt
1 tsp vanilla or 1 tbsp vanilla sugar
1/4 cup (80g) butter
1/2 cup (120mL) milk
1/2 cup (125g) peanut butter
1/2 cup (30g) shredded coconut
2 cups (170g) oats
Combine the sugar, cocoa, salt, vanilla, butter and milk in a saucepan and heat over medium-high heat. Allow to boil for about a minute or until mixture reaches rolling boil. Remove from heat, stir in peanut butter until melted. Stir in remaining ingredients until all combined. Spoon or pipe onto a baking paper lined baking tray. Allow to set at room temperature for an hour or in the fridge for about 20 minutes. Cookies should have no trouble coming off the baking paper when set.

Here is what you'll need!
NO-BAKE CRISPY CHOCOLATE PEANUT BUTTER BALLS
Servings: 40-50
INGREDIENTS
½ cup salted butter, softened
2 cups creamy peanut butter
3 cups powdered sugar
3 cups crispy rice cereal
2 cups chocolate chunks (preferably dark), for coating
PREPARATION
In a large microwave-safe bowl, add the butter and peanut butter. Microwave for 1 minute.
Using a fork, stir together the melted butter and peanut butter until smooth. Microwave additional 20 seconds, as needed.
Add the powdered sugar and rice cereal to the bowl. Gently mix together until fully incorporated.
Using your hands, roll the mixture into approximately 40 1-inch balls. Place them on a wax paper-lined baking sheet and freeze for 15 minutes.
In a small microwave-safe bowl, add the chocolate chunks. Microwave for 60-75 seconds, stopping to check and stir every 30 seconds.
Drop the frozen balls in the melted chocolate one at a time, use a fork to roll around to ensure an even coating. Place back on a wax paper-lined baking sheet.
Garnish with additional rice cereal while the chocolate is still warm. Chill until the chocolate has set.

You can never go wrong when pairing chocolate with peanut butter. Even if you don't like peanut butter you are going to love these Chocolate Peanut Butter Bars. The flavors combine so well, a bit of sweet, salty, chocolaty, nutty flavor, mmmm...totally amazing. It takes no more than 20 minutes to prepare and everybody will love it.

Ingredients
Makes 9-12 servings
Base
7 oz (200g) digestive biscuits (graham crackers)
1/3 cup (70g) unsalted butter, melted
1/2 cup (120 g) crunchy or creamy peanut butter
Chocolate Layer
7 oz (200 g) bittersweet chocolate (55%-70% cocoa)
1/4 cup (60g) creamy peanut butter, divided
Directions
1. Place the biscuits (or graham crackers if used) into the bowl of a food processor and blend until crumbs form. Add peanut butter and melted butter and process until completely combined and the mixture holds together.
2. Slightly grease a 8x8 inch (20x20cm) square pan and line with parchment paper, in such a way that some edges are longer to make it easy to lift it up once it's set.
3. Spread the peanut butter mixture into the prepared baking pan and press with the back of the spoon to create a smooth surface.
4. Melt chocolate and 2 tbsp (30g) of creamy peanut butter over bain marie, over low heat. Stir until smooth. Meanwhile place the other 2 tbsp (30g) of peanut butter into a small sauce pan over low heat and stir until melted and smooth. Spread the chocolate over peanut butter layer. Add teaspoons of melted peanut butter on top and with a knife create swirls on the surface.
5. Refrigerate for 2 hours to set. Let it sit 10 minutes at room temperature before cutting. Bars can be frozen well. Enjoy!
