Nigiri-zushi is one of the most traditional and pure forms of sushi. And yes, you read it right! In this case, it’s technically pronounced zushi with a “Z” instead of sushi. Reason being the word “sushi” is used as a general term when the type of sushi is not specified.
But when there’s a prefix, or in other words when we talk about a particular style of sushi such as nigiri-zushi, temaki-zushi, or chirashi-zushi, we change the S to a Z. Anyways, a little Japanese language lesson for you.
When nigiri-zushi is done well, each piece has a perfect balance between the vinegared rice and neta (usually raw fish). This makes every bite an amazing and exciting adventure for your tastebuds.
In this video I go over step-by-step on how to make nigiri-zushi using one of the most common and traditional Japanese techniques called kote-gaeshi.
After you watch this video, you should have a good knowledge and understanding of each step that goes into making nigiri. With practice, you’ll be on your way to making authentic nigiri-zushi in no time!

He has traveled around the globe to try different styles of sushi, most importantly to Japan.
After college, Jun had taken an opportunity to live in the motherland of sushi, working for something completely outside the culinary field. In those two years his appreciation of the culture, people, history and food deepened.
He became addicted to the food scene and found himself traveling from one end of the island to the other, eating and drinking some of the best foods and drinks he's ever had. This experience became the seed which eventually bloomed to become The Sushi Man.

How to make Edomae Nigiri Sushi with Subtitles
Today, I uploaded a video on how to make authentic Edomae sushi that I have trained in Tokyo, Japan.
People from all over the world make sushi overseas, and I have seen sushi that is too big or distorted.
I'm not saying that it's bad, but I want everyone to know what real nigiri sushi is like.
I know that there are many people at sushi restaurants in big cities who make sushi as beautiful as the Japanese.
In addition, this time I also made Aburi Sushi(seared sushi). I would be happy if I could express the deliciousness of broiled sushi in this video.
The video includes details on how to move my fingers and some tips.
The fish used are tuna, salmon, sea bream, squid, and octopus. It is full of useful information such as how to make sushi with long seafood such as shrimp and how to make sushi with thin seafood such as octopus and squid.

This video shows you how to make tuna nigiri from start to finish, tuna nigiri is a traditional Japanese recipe that features fresh tuna sashimi slices on top of an oblong shape ball of cooked sushi rice, these small bite-sized Japanese snacks have been prepared for centuries in Japan mostly in sushi bars or sushi restaurants. They are very easy to make and you don't have to be a master sushi chef to make them.
Follow the simple instructions in this video to learn how to make this amazingly simple yet delightful recipe. The video will show two different types of tuna nigiri, first is Otoro tuna (toro) which is the fattest most coveted part of the tuna fish, the second nigiri sushi is Akami which is the leanest part of the tuna fish and usually used in most sushi/sashimi recipes.
The video also touches on facts about the most expensive blue fin tuna ever sold, and some consumer information about some of the best knives to cut fish or sushi with , Miyabi knives.
