How To make Napa Unified School District Cheese Bread
1 1/2 pints water (warm to touch)
3/8 cup sugar
3/8 cup powdered milk (keep it powdered!)
1 1/8 tablespoons dry yeast
2 1/4 lbs flour
1/4 lbs margarine/butter
2/3 lbs. American Cheese
Place water, sugar, and powdered milk in very large mixing bowl, and stir well until blended and dissolved. Add yeast on top of water, and stir gently, blending out lumps. Wait until mixture is bubbly. Add 40 lbs. of the flour, and the butter/margarine. Mix up and continue to add flour to get to the consistency of bread dough. Knead until elastic. Break up dough into 2 lb. balls. Sprinkle flour on tabletop and roll out ball into rectangle about 1/4 inch thick. Layer American cheese on dough over-lapping slices about three rows thick. Roll loaf up like jelly roll, and fold ends so cheese doesn't melt out. Place on parchment paper (or loaf pan) and let rise until about double in warm place, covered.
Preheat oven to 350 degrees, or 300 degrees in convection oven, and bake approximately 20-30 minutes or until golden brown. Slice and serve warm.

Someone help to reduce it to a recipe for 2 loaves or so.

The American Cheese Market has shifted towards connectivity and transparency over the last 30 years. Learn how these market changes benefit and challenge the American Dairy Farmer/Cheese maker. Zach Berg grew up cooking his way through Metro Detroit. After attending Michigan State University’s Hospitality School, Zach got a job working at Zingerman’s Deli in Ann Arbor. His love of cheese and specialty retail blossomed in his two years at the famous deli, but the kitchen called. Zach relocated to Napa Valley to attend the Culinary Institute of America and later cooked at Michael Mina’s RN74.
After his stint in fine dining, Zach got involved with Bi-Rite Market and returned to the world of cheese. During his four years at Bi-Rite, Zach won second place in the 2014 Cheese Monger’s Invitational and became a Certified Cheese Professional through the American Cheese Society. Zach has been back in Michigan for a year and opened Berg’s Provisions, a pop-up cheese business. Zach also runs the day to day operations at Gayle’s Chocolates in Royal Oak.
