The only thing better than a delicious full-flavored pasta is one that is meatless and can be prepared in less than 30 minutes. Imagine arriving home from a long day and whipping up a delicious pasta dinner in less than 30 minutes from beginning to end. No sweat, no cooking down sauce and no hot kitchen.
For this recipe the ingredients are simple and widely common; many of which you probably already have in your kitchen and if not they are virtually available in every grocery store. This pasta dish is elevated when incorporating dry white wine. The wine is optional and is perfectly fine and delicious without it however the white wine does intensify the flavor. If you are new to meatless pasta or meat-free dinner options in general, cutting the veggies into larger pieces offers texture which resembles meat and over time helps you to make meal prep and dining decisions that are more inclusive of veggies. Whole cracked garlic cloves are used for this recipe which allows you to control the level of garlic the dish yields. You retain the garlic flavor and can pick out the big pieces after cooking however by the time the dish is finished cooking the garlic will be tender and soft to the bite. Try caramelizing the mushrooms and using halved cherry tomatoes for a vibrant color contrast and a more savory bite.
INGREDIENTS: (servings 3-5)
• Spaghetti Noodles – 1 pack or fresh pasta (or any pasta works well)
• Tomatoes – 1 cup or more depending on preference (vine, plum, steak or any tomatoes will work including cherry tomatoes); slice thick and long.
• Baby Bella Mushrooms – 1 cup or more
• Garlic – 6 to 8 cloves, cracked (add more garlic if desired)
• Parsley – ½ cup, rough or fine chopped.
• Shallot – 2 to 3; sliced long
• Olive Oil
• Butter – unsalted; 2 to 3 tbsps.
• Dry White Wine – ½ - 1 cup; preferably sauvignon blanc
• Vegetable or Chicken Stock – ½ cup to 1 cup.
• Italian Blend Cheese – 1 cup (or more depending on preference)
• Pasta Water – 1 to 2 ladles
• Salt & Pepper – preference to taste
• (OPTIONAL) – La Spaghettata seasoning – which is dried parsley, dried garlic and red pepper.
DIRECTIONS:
• Bring a medium to large sized skillet up to medium heat.
• Begin boiling a pot of salted water and once boiling add pasta. Cook until al dente.
• Drizzle 2 to 3 tbsps. olive oil to the pan.
• Add shallots and allow to cook for approximately 1 to 2 minutes or until softened.
• Once softened, add garlic and toast for 2 to 5 minutes until softened.
• (Optional) Pour white wine and allow to reduce by half or until the strong fragrance of alcohol dissipates. This takes approximately 5 to 10 minutes.
• Afterwards, pour chicken stock into the pan and allow it to come to a simmer.
• Add mushrooms, seasonings, parsley and butter. Allow mushrooms to soften.
• Once softened, reduce heat to low and add cheese.
• Stir cheese frequently until melted without allowing it to stick to the bottom of pan.
• Add 1 to 2 ladles of pasta water to the cheese sauce. Stir until completely incorporated.
• Turn off heat and add pasta.
• Gently stir pasta until evenly covered in cheese sauce.
• Serve immediately.

Mushroom Chow Mein with Sweet Sauce | Veg Chowmein Recipe
⌲ Ingredients:
Water: Two Jugs
Salt: As Per Taste
Oil: One Tbsp
Yellow Food Color: Half Tsp
Noodles: 250 Grams
Oil: Two Tbsp
Garlic Paste: One Tsp
Mushrooms: 100 Grams
Capsicum: One (Slices)
Onion: One (Slices)
Green Onion: Two (Slices)
Salt: As Per Taste
Black Pepper: One Tsp
White Pepper: Half Tsp
Soy Sauce: One Tsp
Hot Sauce: One Tsp
Oyster Sauce: One Tsp
Oil: One Tsp
Onion: Half (Chopped)
Garlic Ketchup: Two Tsp
Tomato Ketchup: Two Tsp
Sugar: Three Tsp
Jalapeno: Five To Six Pcs
Water: Two Tbsp
⌲ The Method of Preparation
✔ Step One:
Pour water in a pot
Then add salt, oil and food color to it and boil the water
Let the water boil
Then add the noodles and cover it on low heat
After five minutes, rinse the noodles with water
Then cover and cook for another eight minutes on low flame
✔ Step Two:
Now heat oil in a pan
Then add garlic and fry for three minutes
Now add capsicum, onion and green onion and mix it
Then add salt, black pepper, white pepper, soy sauce, hot sauce and oyster sauce and cook for four to five minutes.
Now add the boiled noodles and mix well
And keep covered on low flame for five minutes
✔ Step Three:
Heat oil in a pan
Add onion and cook for a minute
Then add garlic ketchup, tomato ketchup, sugar and jalapeño and mix it
Add water and cook for two minutes
Then take it out in a separate vessel
Delicious mushroom chowmein and sweet chutney is ready
Serve as you like

If you want to learn how to cook mushrooms like a chef, or don’t know how to cook them properly, you’re not alone! Most people I see, struggle when making mushrooms and I notice the same mistakes being made constantly. I see people salting in the beginning, or washing them first, and adding ingredients in the totally wrong order. Mushrooms consist of 80-90% water and will do all the work FOR YOU in a DRY pan if you let them (let your food speak to you). No oil, butter, or salt is even needed until the very last step.
Cooking mushrooms in a dry pan will give you the most beautiful outcome (in my opinion), texture, and color as well. The mushrooms go through a process of getting color at first, releasing all of their water, followed by the water evaporating completely and getting golden again. At the end we finish them off with butter, salt, and aromatics of choice for the perfect bite!
