How To make Moroccan Beef Kefta On Skewers with Chopped Vegetable Salad
1 1/2 pound ground beef
1/2 cup grated onion
2 cloves garlic
finely minced
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped fresh coriander
3 teaspoons finely chopped fresh mint or 1 teaspoon
:
dried mint 2 teaspoons finely chopped fresh marjoram or 1/2
teaspoon dried marjoram salt and freshly ground black pepper 1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne
chopped vegetable salad: 1 seedless cucumber :
peeled and finely
diced 1 large tomato :
seeded and finely
diced 1 green bell pepper :
seeded and finely
-- diced 1 hot italian-style pepper seeded and finely
:
diced 2 cloves garlic finely minced
3 tablespoons finely chopped fresh mint
2 tablespoons red wine vinegar
2 tablespoons olive oil :
(up to 3)
In a large bowl combine the beef, onion, garlic, parsley, coriander, mint, marjoram, salt, pepper, cumin, paprika and cayenne. Cover and let sit for one hour. Soak 12 wooden skewers in water for one hour.
In a separate bowl combine cucumber, tomato, bell pepper, hot pepper, garlic, mint, red wine vinegar, olive oil, salt and pepper tossing to combine. Cover and let marinate at room temperature until ready to serve.
Preheat grill or broiler.
Dip hands into a bowl of water. Shape and pack about a 1/3 cup of the meat mixture into 2 sausage-shapes on a soaked wooden skewer. Repeat procedure for remaining meat and skewers.
Grill the keftas on both sides until cooked through, about 3 to 4 minutes per side. Serve hot with chopped salad.

- Beef/mutton/lamb mince 1 kg
(70% meat 30% fat) (charbi wala keema)
- Red bell pepper ( lal shimla mirch) 1 medium
- Garlic 5-6 cloves (lehsan)
- Onion (pyaaz) 1 large
- Parsley or Coriander 1/2 bunch OR 1/2 cup
(dahnia)
- Salt (namak) 3/4 tbsp or to taste
- Black pepper (kali mirch) 1 tsp
- Sumac 1 tbsp ( substitute: Pomegranate powder (anardana powder 1 tbsp or lemon juice 2 tbsp with 1/8 tsp lemon zest )
- Coriander powder (dahnia) 1/2 tbsp
- Cumin powder (zeera) 1 tsp
- Red chilli (lal mirch) 2 tsp
- paprika powder 1 tsp
- Oil for frying 2-3 tbsp
For Salad:
- Onion (pyaaz) 1 large
- Tomato 1 large
- Parsley or Coriander 2-4 tbsp
- Lemon juice 2 tbsp
- Sumac 1/2 tsp OR Black pepper (kali mirch) 1/4 tsp

Eid-Al-Adha is coming up next week and Moroccans are going to be preparing delicious lamb dishes. We are going to prepare ground lamb meat skewers. In Morocco, ground meat is very popular (especially during Eid) and it is either cooked in a sauce or grilled. We are going to grill it, but we are going to add two ingredients that are going to make the flavors pop: chopped mint leaves and freshly grated nutmeg!

RECIPE:
INGREDIENTS:
500 grams (1 pound) beef liver
2 teaspoons paprika
1 teaspoon ground cumin
Pepper
1 teaspoon salt, to taste
Hot red chilli pepper, to taste
DIRECTIONS:
Step 1: Prepare the Liver
1- Grill the liver strips for a few minutes on each side until it is half cooked.
2- Cut the liver into bite sized square pieces of 2 cm.
3- Place in a bowl.
Step 2: Make the Skewers
1- Add all the spices: paprika, ground cumin, salt, and chilli pepper to the liver and mix well.
2- Place the marinated liver in the skewers. Each skewers should have 5-6 such piece.
Step 3: Grill the Skewers
1- Heat a grill pan on medium heat, then cook the skewers a few minutes on each side until it's cooked.
Serve immediately.

Today we are going to make traditional Moroccan spiced ground meat: kefta! Flavorful, moist, and just perfect.
RECIPE:
INGREDIENTS:
500 grams (1 pound) beef ground meat
2 tablespoons finely chopped parsley
2 tablespoons finely chopped cilantro
15 mint leaves, finely chopped
1/2 medium onion, grated
3 tablespoons olive oil
1/2 teaspoon ground ginger
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon ground coriander
1/4 teaspoon pepper, to taste
1/4 teaspoon salt, to taste
DIRECTIONS:
Step 1: Prepare the kefta
1- In a large bowl, place the ground meat and add the remaining ingredients.
2- Mix well.
3- Cover the bowl with a plastic wrap and place in the refrigerator for at least 30 minutes so that the flavors of herbs and spices are spread in the ground meat.
Step 2: Cook the kefta
4- Shape the ground meat into cylinders the size of a finger.
5- Heat a grill pan on medium heat, then cook the ground meat for about 3-4 minutes on each side until cooked. Serve the kefta hot!

Beef Kofta Kebabs
Ingredients:
2 lbs Ground Beef
1/2 Onion (finely minced)
4 Garlic Cloves (finely minced)
1 Bunch Of Mint (finely minced)
1 Bunch Of Parsley (finely minced)
1 Tbsp Lemon Juice
1 tsp Ground Coriander
1 tsp Ground Ginger
1 tsp Cinnamon
1/2 tsp Nutmeg
2 tsp Allspice
1 tsp Cumin
2 tsp Paprika
1/2 tsp Cayenne
1/2 tsp Ground Green Cardamom
1 tsp Sumac (optional)
Salt and Black Pepper
Accoutrements:
Pita or Flat Bread
Sliced Onion
Sliced Cucumber
Sliced Tomato
Shredded Lettuce
Lemon Wedges
Tzatziki Sauce Ingredients :
1 Cup Yogurt
1/2 Cup Cucumber (grated)
1 Garlic Clove (minced)
1 Tbsp Mint (finely minced)
1-2 Tbsp Lemon Juice
1 Tbsp Olive Oil
Salt
Instructions:
In a large bowl combine all the tzatziki sauce ingredients and season with salt to taste. Place in the fridge until ready to serve.
In a large bowl combine the ground beef, all the dry spices, finely minced onion, garlic, mint, lemon juice, and parsley. Season with salt and pepper then mix until completely incorporated and slightly tacky.
Form a few ounces of the ground meat mixture into a oblong shape in your hand. Using a flat skewer, skewer the meat through the center and evenly spread the meat across the length of the skewer. (PRO-TIP: keep the meat cold, this will help the meat stick and stay on the skewer). Repeat with the rest of the kebabs. Place the kebabs on a sheet tray then place in the fridge to keep cold while you fire up the grill.
Next using a charcoal grill with a few wood chunks added for smoke, grill the kebabs suspended by a metal kebab holder (Check Amazon). Turn the kebobs every 30 seconds until cooked then remove from the grill. (You can also grill the kebabs directly on the grill just make sure the grill grate spacing is close together).
Serve the kofta with sliced tomatoes, red onion, cucumber, lemon wedges, lettuce, pita or flatbread, and the tzatziki sauce.
