INGREDIENTS
300 g minced pork, the best quality you can afford
300 g minced beef, the best quality you can afford
10 g fresh dill, chopped
10 g fresh parsley, chopped
100 ml sour cream
75 g dried breadcrumbs
1 tsp ground allspice
1 tsp sea salt and freshly ground black pepper
300 ml chicken stock
100 ml sour cream
100 ml double cream
1 tbsp mustard
1 tsp honey Mashed potato to serve
A jar of cranberry sauce, and fresh dill, to serve
Serves 4
Prep = 30m
Cook = 25m
Total = 55m
STEP 1: MAKE THE MEATBALL MIX
Set aside a few of the herbs, then put the rest into a large bowl with the pork, beef, egg, sour cream, breadcrumbs and allspice. Add a good pinch of salt and pepper, then get your clean hands in there and scrunch and mix it well. Leave the mixture to marinade for 30 mins.
STEP 2: MAKE THE MEATBALLS
After 30 min remove the meatballs from the fridge and roll into equal size balls about the size of a ping pong ball. Keep wetting your hands as you go so you get nice round meatballs. Put them on a large oiled tray.
STEP 3: FRY THE MEATBALLS
Put a large pan on a medium heat and add a glug of olive oil. Once hot, add the meatballs and fry gently for 10 to 15 minutes, tossing occasionally, until they are golden brown. You might have to do this in batches. Transfer the meatballs to a large plate.
STEP 4: MAKE THE SAUCE
Spoon away any excess fat from the pan, then add the lemon juice, a splash of stock, the flour, the cream, and a good pinch of salt and pepper. Bring to the boil, then turn the heat down and reduce until you have a nice consistency that will cling to the meatballs. Taste it, then season with a pinch of salt and pepper. Return the meatballs to the pan and move them around so they get coated in the sauce.
STEP 5: SERVE
Serve your meatballs -- eight per person is about right -- drizzled with any lovely sauce left in the pan and with a few spoonfuls of cranberry sauce on top. Scatter over some more dill and parsley and serve with mash

Meatballs In A Creamy Mushroom Sauce
Welcome Friends. Today in the kitchen we are going to make meatballs in a creamy mushroom sauce. This is the perfect potluck dish. If You've never made meatballs or a mushroom sauce from scratch before - don't worry, this is super simple.
Ingredients:
For the Meatballs:
175 mL (¾ cup) bread crumbs
10 mL (2 tsp) dry oregano
5 mL (1 tsp) red pepper flakes
4 garlic gloves, crushed
500g (1 pound) ground beef
1 egg
Salt to taste
30 mL (2 Tbsp) olive oil
For the Sauce:
1 medium onion, chopped
300g mushrooms, chopped
3-4 garlic cloves crushed
15 mL (1 Tbsp) flour
300 mL (1¼ cups) beer (or wine / chicken stock)
Salt and pepper to taste
125 mL (½ cup) cream
Method:
In a large bowl, mix together bread crumbs, oregano, pepper flakes, garlic, ground beef, salt, and egg.
Mix until combined and form into meatballs.
Refrigerate until needed.
Heat oil in a pan and fry off as many as possible without overcrowding.
You may have to do this in batches.
Brown the meatballs on all sides and remove to a plate.
If there is excess oil in the pan drain it off.
Add onions and fry until translucent.
Add the mushrooms and cook until they have released all of their moisture.
Stir in the garlic, then the flour; cook 1-2 minutes more.
Slowly add the beer and stir continuously as the sauce thickens.
Stir in the salt, pepper and meatballs.
Simmer the meatballs for a few minutes, then stir in the cream.
Add a little beer, wine, water or chicken stock if the sauce is too thick.
Serve hot with with your fave sides.

Ingredients:
- Minced chicken 450 gr
- Egg 2 pcs.
- onion (half)
- Sour cream
- Greens
- Philadelphia cheese
- Garlic, salt, pepper, spices
- Butter for frying
1. Add the egg, salt, curry seasoning, dried garlic to the minced chicken, mix. 2. Fry the onion in butter and vegetable oil for a couple of minutes, add mushrooms, salt and pepper. Fry until golden brown. Add Philadelphia cheese. Fresh garlic, turn off the heat.
3. Beat the minced meat, form a ball, and then a nest. put on a baking sheet. 4. Add greens to sour cream. We start the stacks with mushrooms, put sour cream and cheese on top. We send it to the oven at 180 gr. for 25 minutes.

• garlic powder – 1 tsp
• ground black pepper – ½ tsp
• salt – 1 tsp
• vegetable oil – 2 tbsp
For sauce:
• butter – 1 oz / 30 g
• wheat flour – 5 tbsp
• beef broth – 3 cups | 700 ml
• 23-30% cream – ½ cup | 100 ml
• dijon mustard – 2 tsp
• salt – to taste
• black pepper – to taste

• bowl
• meat grinder

???? Preparation:
1. Add the bread crumbs, chopped parsley and onion, ground allspice and black pepper, nutmeg, garlic powder, salt and an egg into the minced meat. Mix well.
2. Roll the minced meat into balls of a walnut size.
3. Heat 2 tbsp of vegetable oil in the pan and fry meatballs from each side over medium heat until readiness for about 15 minutes.
4. Lay out the meatballs into the bowl.
5. Heat the pan, add the flour and fry over low heat until golden brown.
6. Pour in gradually the broth stirring constantly and add then the cream, mustard, salt and pepper to taste. Boil over low heat until light thickness of the sauce.
7. Add the meatballs into the pan and stew them in the sauce for 3 minutes over low heat, sprinkle with the chopped parsley.
8. Serve Swedish meatballs with boiled potato, pickles and lingonberry or vegetables.
