How To make Maryland Crab Soup
4 c Water
2 12 oz cans tomatoes,
-minced 1/2 lg Onion, chopped
2 Carrots, sliced
1 cn Sweet corn
1/2 lb String beans, cut into
-1 inch pieces 1 Hot pepper, minced
Old Bay seasoning, to -taste 1 lb Crabmeat
Put everything but the crabmeat into a large pot and bring to a boil. Cover and simmer, adding crabmeat, for about 2 hours. Don't buy the lump crabmeat, it's a waste. I used leftover crabmeat and clawmeat, which gives it a bit more sweetness. If you're buying crabmeat, it's probably best to by 1/2 lb each of claw and backfin. -----

1/4 pound blue crab meat
1/2 cup diced carrots
1/2 cup diced potato
1/2 cup diced onion
3 1/2 cups beef broth
28 oz. can crushed tomatoes
1/2 cup frozen lima beans
1/2 cup canned or frozen corn
2 TBSP old bay
RECIPE
1. In medium pot heat tomatoes and beef broth.
2. Add bay leaf and old bay. simmer 10 minutes.
3. Add corn, peas and onions. Simmer for another 10 minutes.
$. Add crabmeat to each serving rather than to the pot. This will provide fresh tasting soup...enjoy!

Ingredients:
1 lb Lump Crab Meat (preserving some to garnish)
4 tbs butter
4 tbs flour
1/2 grated onion
1-2 stalk grated celery
1-2 tsp minced garlic (optional)
2 bay leaves
2 cups half & half cream
1 cup heavy cream
1.5 cups chicken stock or seafood stock
1.5 tbs lobster base
1 tbs Worcestershire sauce
hot sauce to taste
1/2 cup sherry (plus more if desired)
old bay, salt & pepper, garlic powder, and onion powder to taste
Directions:
Melt butter in a large stockpot or dutch oven over medium heat.
Mix in the onion, celery, and garlic and season with salt and pepper. Sweat the veggies for about 1-2 minutes
Add in Lobster Base and stir to incorporate
Stir in flour to form a roux. Cook this mixture for about 3 minutes to cook out the raw flour taste.
Gradually whisk in the half & half and bring to a simmer
Next, whisk in your heavy cream and chicken stock and bring back to a simmer
Pour in your sherry (reserve more for later if desired based on taste)
Add Old Bay, Worcestershire, Hot Sauce and taste for seasoning. Adjust as needed
Cover and simmer for 30 minutes, stirring occasionally
Add in crab meat and simmer for another 15 minutes. Taster one more time for seasoning and then serve mr make it happen

INGREDIENTS:
1 pound crabmeat
1 can of baby clams and juice
1 cup diced onions
1 cup diced celery
1 cup diced carrots
1 cup corn
1 cup lima beans
1 cup diced potatoes
1 - 28 oz can diced tomatoes
4 cups chicken broth
1 bay leaf
2 minced cloves garlic
1-3 tsp. old bay seasoning
1 tbsp. Worcestershire sauce
fresh chopped parsley
salt and black pepper
olive oil
In a soup pan on medium heat add olive oil,
onions, celery, carrots, minced garlic and
salt and black pepper.
Stir and cook for 5 minutes.
Add tomatoes, juice of baby clams, Worcerstershire
sauce and Old Bay Seasoning (add a little at a time).
Stir and turn up heat to bring up to a simmer.
Add chicken broth, corn, lima beans and bay leaf.
Bring up to a simmer, reduce heat, cover and cook
for 30 minutes.
Add potatoes, baby clams and crabmeat.
Give soup a stir and bring back up to a simmer
and cook for 10-15 minutes until potatoes are tender.
Give a taste test along the way.
Add a handful of fresh chopped parsley at the end,
stir and serve.
Enjoy.
