How To make Marinated Cubed Beef with Lime Sauce (Cambodian)
1 tb Sugar
1 1/2 ts Fresh ground black pepper
2 tb Mushroom soy sauce
7 Garlic cloves, crushed
1 1/2 lb Sirloin, 1/2 in cubes
2 tb Lime juice
1 ts Water
2 tb Canola Oil
1 Green leaf lettuce
Combine sugar, 1 teaspoon of the black pepper, soy suace and garlic. Stir well and add the beef. Stir well to coat beef and marinade for 20 minutes or longer. Combine remaining pepper with lime juice and water. Place in a small serving bowl. Saute beef in hot oil, three to four minutes until medium rare. Arrange on platter lined with lettuce and serve with lime sauce and toothpicks, or serve as a main dish over jasmine rice. Clay Irving

Stir Fry Beef Black Pepper also known as Beef Lok Lak is so popular in Cambodia
but it is actually comes from Vietnam, where it is called bò lúc lắc.Bò means “beef” and lúc lắc means “stir” or “shake”.
The dish consist of beef marinated with black pepper stir fry together with onions, served with cucumbers and tomatoes, dipped in sauce a mixture of lime juice, salt & pepper.
The ingredients:
600 gm beef cut into 1inch cube
1-2 large onion - wedged
Some lettuce & tomatoes
Marinade:
1 tbsp oyster sauce
2 tbsp soy sauce
2 tbsp dark sweet soy sauce
3 cloves garlic - minced
1-2 tbsp black pepper
1-2 tbsp corn flour
½ tsp baking soda
Stir Fry Sauce:
1 tbsp oyster sauce
2 tbsp soy sauce
1 tbsp sugar
Dipping sauce:
Pinch of salt
1 tbsp black pepper
3-4 tbsp lime juice

Bo Luc Lac (Shaking Beef)
Ingredients:
Beef Marinade:
1.5 lbs. of your favorite cut of beef (I like rib-eye) cut into 1″ cubes
3 medium cloves of garlic, minced
2 tbsp. sugar
2 tbsp. oyster sauce
1 tbsp. fish sauce
1 tbsp. sesame oil
1 tbsp. soy sauce
1 tsp. white or rice vinegar
1 tsp. red pepper flakes (optional)
1 tsp. sriracha (optional)
Vinaigrette:
1/2 cup white or rice vinegar
1.5 tbsp. sugar
1/2 tbsp. salt
1/4 red onion, thinly sliced
2-3 handfuls of mixed greens salad mix
1-2 tomatoes cut into wedges
Cooking oil for frying
Black pepper
Directions:
Prepare marinade by combining garlic, sugar, oyster sauce, fish sauce, sesame oil, soy sauce, vinegar, red pepper flakes and sriracha. Marinate the beef in the marinade in the refrigerator for at least one hour.
Prepare vinaigrette by mixing the vinegar with salt and sugar.
Thinly slice the red onion and use about half of the vinaigrette to pickle and set aside.
Prepare bed of mixed greens and tomatoes in a serving platter and set aside.
Heat a wok or large pan over high heat and add about two tbsp. of oil. When the oil begins to smoke, add an even layer of the marinated beef and sear for a few minutes. Shake your wok or pan to sear and brown all sides of the beef, about another two minutes. Cook beef in batches, if necessary, to avoid crowding of the pan.
Serve beef on bed of mixed greens and tomatoes. Dress with 3-4 tbsp. of vinaigrette over the beef and greens and top with pickled red onions and freshly ground black pepper.
Note: You can substitute the sugar for either stevia or honey. I have tried both substitutions and the dish was still delicious. However, when I used stevia, the sauce did not caramelize as much but it still tasted great. Keep in mind that I like a lot of spice in my cooking so you can certainly eliminate the hot pepper flakes and sriracha!

Shaking Beef / Bo Luc Lac (Vietnamese Food)
Shaking beef aka Bo luc lac is a quick Vietnamese stir fry recipe. This may not be the authentic way of making this dish, but this is my way. This is a quick dish that you can whip up- marinate the meat for at least 30 minutes (or longer) and stir fry until your liking. I stir fried mine until my beef was medium rare. A one pot dish that your family and friends will love!
Ingredients:
2 lbs Boneless Rib Eye Steak cubed
2 tbs low sodium soy sauce
2 tbs good quality fish sauce
1 tsp of dark soy sauce (for color)
2 tbs white sugar
2 tsp ground black pepper to taste
2 tsp vegetable oil (for marinade) + extra for frying
10 garlic cloves minced (half for marinade / the other half to saute)
1 shallot minced (half for marinade / the other half to saute)
1 Thai chili minced (or more depending on your spice level- optional)
1 Red bell pepper cubed
6 stalks of green onions cut in 3rds
Lime wedge to squeeze on top of beef before serving (optional)
Instructions:
1. To make the marinade: mix soy sauce, fish sauce, dark soy sauce, sugar, pepper, 1/2 of the minced garlic and shallots, and oil.
2. Marinate beef with the marinade mixture for at least 30 minutes – a day.
3. Heat wok and saute Thai chilli and the rest of the garlic and shallots until fragrant.
4. Add beef to wok and saute until half way done.
5. Add bell pepper to the beef and saute until beef and bell pepper is cooked to your liking.- I like mine medium rare.
6. Add the green onions and let it wilt.
7. Finish off with squirt of fresh lime juice.
8. Enjoy with rice.
