How To make Lime Delicious Cheesecake
1 1/4 c zwieback toast crumbs
1/3 c margarine, melted
1/4 c cold water
3 ea large eggs, separated
1 1/2 ts grated lime peel
2 c thawed whipped topping
2 tb sugar
1 ea env. unflavored gelatin
1/4 c lime juice
1/2 c sugar
16 oz light neufchatel cheese,soft
Combine crumbs, sugar and margarine; press onto bottom of 9-inch spring- form pan. Bake at 325 degrees F., 10 minutes. Cool. Soften gelatin in water, stir over low heat until dissolved. Add juice, egg yolks, 1/4 c sugar and peel; cook, stirring constantly, over medium heat 5 minutes. Cool. Gradually add gelatin mixture to the softened Light Neufchatel cheese, mixing at medium speed on electric mixer, until well blended. Stir in a few drops of green food coloring, if desired. Beat egg whites until foamy; gradually add remaining sugar, beating until stiff peaks form Fold egg whites and whipped topping into neufchatel cheese mixture, pour over crust. Chill until firm. KEYLIME PIE CHEESECAKE
Serves 8

INGREDIENTS:
4.5 oz (125g) of chocolate wafer cookies
1 tsp (5 ml) sugar
pinch of salt
3 tbsp (45 ml) butter, melted
16 oz (452 g) of whipped cream cheese
1/3 cup (65 g) of sugar
2 eggs
1 ½ tsp (7.5 ml) vanilla
2 tbsp (15g) flour
1 14-oz (400 ml) can Sweetened Condensed Milk
4 egg yolks
½ cup (120 ml) key lime juice (about 12-13 key limes + one more key lime for the garnish)
2 cups (480 ml) heavy cream
2 tbsp (13 g) powdered sugar
1 tsp (5ml) vanilla extract
METHOD:
Preheat oven to 350F (176C). Spray a spring form pan with baking spray and distribute well with a pastry brush and set aside.
Place the cookies, the sugar and salt in a food processor. Process until crumbs form. Add melted butter, continue to process until wet crumbs form. Transfer crumbs to the spring form pan and shake the pan to level the crumbs and then press them tin with a measuring cup or the bottom of a glass.
Bake crust for 5-6 minutes until fragrant. Allow to cool.
In the bowl of an electric mixer, combine cream cheese and sugar, beat on high until smooth. Add eggs, one at a time, beating in between each addition. Add vanilla extract and beat and then add flour and beat just until combined.
Pour cheesecake filling into cooled cookie crust, smoothing out with a spatula until layer is leveled out. Set aside.
In a large mixing bowl combine sweetened condensed milk, egg yolks and key lime juice. Whisk until smooth.
Pour the key lime mixture on top of the cheesecake mixture, making sure you are covering all the cream cheese with the pie filling. Smooth out with a small spatula.
Bake in a 350F(176C) oven for 35-40 minutes until cheesecake is set and jiggles slightly.
Allow to cool completely.
For whipped cream topping, combine heavy cream, powdered sugar and vanilla in the bowl of an electric mixer. Whip on high until stiff peaks form. Transfer to a pastry bag with a round tip. Pipe little dollops of whipped cream all of over cheesecake until covered.
Garnish with fresh lime zest on top and a thinly sliced lime wheel in the center. Chill overnight to set.

Ginger Lime Cheesecake Recipe
Ginger Lime Cheesecake recipe with a graham cracker crust. This baked cheesecake recipe is creamy and delicious. Its a sweet little Saint Patrick's dessert when you decorate it with some greens or as I did a green buttercream Shamrock. The candied Ginger surprise inside makes this special and the Lime glaze gives it an extra bit of sweetness and contrast. I love the classic graham cracker crust but you can use any type of crushed cookies mixed with just enough butter to hold it together.

Ginger lime cheesecake recipe
The Perfect Key Lime Cheesecake
Cheesecake is my favorite dessert! I remember saying when I was a young girl that I would have a cheesecake for my wedding cake!!! For my 10 year anniversary, I will make that happen and get married again! LOL!
This cheesecake is truly the best cheesecake I have ever made! So CREAMY, RICH, and THICK! It has the perfect tart taste that key lime pie has and is just the perfect combination! Please follow me on instagram and facebook to see my amazing baking and cooking tips!
Ingredients:
For the Crust:
2 cups graham cracker crumbs
1/3 cup sugar
7 tablespoons butter, melted
For the Key Lime Cheesecake:
5 packages of full-fat cream cheese, room temperature
1 and 1/2 cups white sugar
2 teaspoons vanilla extract
2 teaspoons lime zest,
5 large eggs plus 3 egg yolks, room temperature
1/4 cup heavy cream
1/2 cup lime juice
Instructions:
1. Preheat oven to 350 degrees (F).
2. Butter or lightly spray a 9 springform pan.
3. Wrap the bottom and sides pan with aluminum foil.
4. In a big bowl, combine graham cracker crumbs, sugar, and melted butter. Mic well to combine. Firmly pat the mixture into the prepared pan using a 1/4 measuring cup.
5. Bake crust in preheated oven for 10 minutes. Let partially baked crust on the side to cool while preparing filling.
For filling:
1. Make sure to lower oven temperature to 300F.
2. Using a mixer, beat cream cheese until soft and no lumps.
3. Add in white sugar and mix well.
4. Add vanilla and eggs and egg yolk one at a time beating after each one.
5. Then add in the heavy cream and zest and mix well.
6. Last, add lime juice.
7. Pour filling into prepared crust.
8. Put cheesecake pan in a deep bowl and add 2 inches of hot water into deep bowl.
9. Bake for 1 hour 25 minutes.
10. Turn off oven and leave cheesecake in oven for 30 minutes.
11. Decorate cake with whip cream and zest.
Notes:
1. Make sure to cover cheesecake pan with enough layers of foil to make sure no water can seep into cheesecake.
2. To make whipping cream more flavorful, add lime juice and powdered sugar and vanilla.
3. DO NOT OPEN OVEN AFTER FINISHED BAKING FOR 30 MINUTES!
Easy Whipping Cream Recipe:
1 cup heavy cream
1 tsp vanilla
1/4 c powdered sugar
2 tbsp lime juice
Mix together and use a piping bag and tip to add on to cheesecake!
