4 c All-purpose flour
2 c Granulated sugar
1 tb Ground cinnamon
2 ts Pulverized baking ammonia
(sold at pharmacies (or 1 tsp cream of tartar (mixed with 1 tsp baking -soda 1/2 ts Salt
1 c Butter
3 Eggs; beaten
2 ts Lemon peel; finely shredded
1 Egg white
1 tb Water
Pearl sugar; or regular -sugar 4 oz Semisweet chocolate
Melted/optional Recipe by: Midwest Living, December 1994 Preheat oven to 375 degrees. In a very large mixing bowl, stir together the flour, sugar, cinnamon, baking ammonia and salt. Cut in the butter until the mixture resembles coarse meal. Add the eggs and lemon peel; mix well to form a dough. On a floured surface, roll out the dough to 1/8-inch thickness. Cut into shapes with 2 ro 3-inch cookie cutters. Place
the cutouts on ungreased cookie sheets. Combine the egg white and water; brush over the tops of the cookies. Sprinkle with sugar. Bake for 8 to 10 minutes, or until golden. Remove to a wire rack to cool. Drizzle with melted chocolate, if you like. Makes 60 to 84 cookies. Penny Halsey Note: To spread out your baking tasks, you can mix up the dough one day and chill it overnight. Then, roll out and bake the cookies the next day. You can store baked cookies in the freezer for up to 6 months. -----

EGGLESS WHEAT CINNAMON COOKIES
Ingredients
1¼ cups whole wheat flour
½ cup butter
¼ cup + 1 tablespoon castor sugar
1 teaspoon vanilla essence
¼ teaspoon nutmeg powder
½ teaspoon + ¼ teaspoon cinnamon powder
1½ tablespoons milk
Method
1. Whisk butter in a bowl using an electric beater till smooth. Add ¼ cup castor sugar and whisk till light. Add vanilla essence and whisk.
2. Sift together wheat flour, nutmeg powder and ½ teaspoon cinnamon powder and mix well. Add milk and mix till well combined into a dough. Refrigerate for 15-20 minutes.
3. Mix together remaining castor sugar and remaining cinnamon on a plate.
4. Preheat oven to 180˚ C.
5. Roll out the dough into ½ cm thick sheet and cut into roundels using a medium size cookie cutter.
6. Place the cookies on a baking tray and sprinkle some cinnamon-sugar on top.
7. Put the tray into the preheated oven and bake for 10-15 minutes. Remove from oven and cool.
8. Serve.

Cinnamon Stars Zimtsterne Christmas Cookies
Cinnamon Stars “Zimtsterne”
Recipe for 1 baking tray / about 21 pcs
(403kcal/100g)
Ingredients:
1 ½ bags almonds (300g)
1 cup Icing sugar (200g)
4 tsp cinnamon powder (10g)
½ lemon (skin and juice) (63g)
2x egg white (72g)
Some sugar to roll out the dough.
Preparation method:
- Beat up the egg white in a very clean bowl with a whisk.
- Add the icing sugar gradually to the egg white once it is almost stiff.
- Remove 4 tbsp of the mixture for later.
- Force the almonds through a fine grater / food processor into a bowl.
- Add the egg white/icing sugar mix and the cinnamon to the ground almonds.
- Rub off the peel of the lemon and add it to the rest.
- Press out the juice of the lemon and add it as well.
- Mix everything with your hands until you have a compact dough, don’t knead to long.
- Add some sugar on to your working surface, put the dough on it and put some
sugar on the dough.
Spread out the dough with a rolling pin until it is about as thick as your little finger.
- Cut out the cookies with your biscuit cutters and put them on a baking tray with baking paper.
- Knead the leftovers together and repeat the rolling out / cutting until all dough is used.
- Spread out the egg white / icing sugar mixture from earlier on the cookies with the help of the back side of a tablespoon.
- Bake the cookies at 130°C for 15 minutes.
- Remove the cookies from the tray after the baking and put them on a cooling rack.
Notice:
- These cookies shouldn’t be baked too hot! Otherwise the Icing will go brown.
This is a traditional Christmas cookie recipe which is baked all over Switzerland for Christmas.
Preparation time: 30min
Cooking time: 15min
Start to Finish: 1h
Shelf life:
- You can keep these cookies in a tin for about 3-4 weeks, notice that you have to work very clean and the tin should also be very clean, otherwise the cookies will grow mould.
- The better choice would be to freeze them in an airtight bag and defrost them 2h before consumption. You can keep the cookies in the freezer for at least 3 months and they will taste still very fresh after defrosting.
