7-LAYER SALAD! // Wisconsin
My friend Rebekah teaches me how to make a seven-layer salad, Wisco style! Sorry Mrs. Eriksen, only one layer of mayonnaise and no gummy bears required. Below is the recipe she uses. Comment below with your favorite version of this salad!

Rebekah Peppler's Wisco 7-Layer Salad
4 cups mixed greens
2 celery stalks, diced
1/2 small red onion, finely chopped
1 red bell pepper, seeded and diced
1 cup frozen peas, defrosted
1/2 cup mayonnaise, at room temperature
8 ounces grated sharp Wisconsin cheddar cheese
3 pieces thick cut bacon, fried and crumbled (optional)
In a 9x13 casserole dish layer mixed greens, bell pepper, celery, onion and peas. Spread with a thin layer of mayonnaise. Cover with cheddar and finish with bacon. Best refrigerated for at least an hour before serving.

TexMex Chicken Pasta Salad
TexMex Chicken Pasta Salad is a great cold dish for those hot summer days. It is easy to throw together and you can change it up and leave out the chicken if you want a vegetarian version. Let me know what you think about this version and y'all enjoy.

Ingredients:
1 12 ounce box colored rotini
1 1/2 cups Ranch Dressing
1 cup salsa
15 ounce can black beans
15 ounce can corn
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 - 1 teaspoon cumin
1/2 medium red pepper diced
1/2 medium red onion diced
1 1/2 cups grilled chicken strips
1 cup Mexican blend cheese
Cook pasta according to box directions and then rinse and chill.
Add cooled pasta to large bowl along with the beans, corn, red pepper, and onion, mix well.
In small bowl, mix together the dressing, salsa, chili powder, cumin and smoked paprika.
Add the chicken to the bowl along with the sauce mixture and stir to combine.
Refrigerate 1-2 hours to chill.
