How To make Kartoffelknoedel (Potato Dumplings)
Ingredients
1/2
pound
potatoes, [that have previously been boiled in their jackets, then let cool, and peeled] (200 grams)
1
ounce
plain bread crumbs, (30 grams)
1
large
egg
2
tablespoons
butter, (30 grams)
1
salt, to taste
1
pepper, to taste
Directions:
This refers to dumplings made from boiled potatoes which is the traditional Swabian method. Dumplings made from raw potatoes originated in Bavaria and reached Swabian kitchens relatively late.
Beat the butter and egg until fluffy. Add the cold, grated, boiled potatoes, bread crumbs, salt, and pepper, and knead well. Depending on how watery the potatoes are, flour may be substituted for the bread crumbs in order to get a dough that is neither too firm not to pasty.
Form dumplings, and cook in barely simmering salted water for 15 minutes.
Serve immediately, while still piping hot.
These dumplings are also very popular as a main dish, with brown gravy.

CHIVE & ONION POTATO DUMPLINGS ????
I’ve seen these dumplings absolutely everywhere & it was about time I made my own version ! I flavoured mine with onion, garlic & chives before cooking then served them with a sizzling chilli oil & they were dreeeeamy (and let’s be honest that lil mushroom shape is cute af x)
ingredients (makes 8 dumplings)
400g potatoes, peeled & cubed
1/2 tsp garlic granules
1/2 tsp onion granules
small handful of chives, finely chopped
120g cornflour (aka corn starch)
1/2 tsp salt
chilli oil:
1 tbsp crispy chilli oil
1/2 tbsp gochugaru
1 garlic clove, minced
1 spring onion, finely chopped
1 tbsp tamari (or soy sauce)
1/2 tbsp black vinegar
1/2 tbsp agave (or maple syrup)
3 tbsp cooking oil
method
1. boil the potatoes until tender then mash very thoroughly
2. stir in the garlic granules, onion granules, chives & salt before adding the cornflour then mix to form a dough
3. roll into 8 balls then press with the top of a bottle to make an indent (like a mushroom shape)
4. boil in salted water until they float then drain & transfer to a serving bowl
5. top with all the chilli oil ingredients, apart from the cooking oil, heat this until smoking then pour over the dumplings (aim for the aromatics)
6. give everything a good stir & enjoy!
