-Waldine Van Geffen VGHC42A 72 Chicken drummettes MARINADE 2 Scotch Bonnet peppers or 4 Jalapenos; seeded 3 bn Green onions 1 c Red wine vinegar 1 c Olive oil 1/2 c Soy sauce 1/2 c Dark rum 1/4 c Brown sugar 1 tb Fresh thyme 1 ts Each ground cloves, nutmeg, -allspice and cinnamon Blend all marinade ingredients in a blender. Marinate chicken wings overnight. Use gallon plastic bags. Cook wings in a 350~ oven for 30 to 40 minutes. Baste frequently. Source: Times-Picayune

For the Marination of the Chicken 1 kg Chicken Wings ½ cup Onions (chopped) ½ cup Spring Onion Greens (chopped) 3 Green Chillies 2 tsp Black Peppercorns 6 Garlic Cloves 3 tbsp Soy Sauce 2 tbsp Brown Sugar ⅓ Lime Juice 2 tsp All Spice Powder ½ tsp All Spice Powder ½ tsp Cumin Seeds 1 tsp Dried Thyme ½ tsp Nutmeg (grated) 2 tbsp Oil Salt (as required)
