How To make Jack O' Lantern Cupcakes
1 pk Yellow cake mix
1 1/2 ts Pumpkin pie spice
1 c Buttermilk
1 c Pumpkin
2 Eggs
*frosting* 3 tb Margarine; softened
3 tb Pumpkin
2 c Powdered sugar
1/2 ts Milk
1/2 ts Vanilla
Black licorice twists Small green gumdrops
Line 24 muffin cups with paper baking cups. In large bowl, combine all cupcake ingredients at low speed until moistened; beat 2 minues at medium speed, scraping down sides of bowl. Pour batter into prepared muffin cups. Bake at 350 degrees for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool completely. In small bowl, beat margarine and 3 tablespoons pumpkin until well blended. Gradually add 1 cup of the
powdred sugar; beat until smooth, about 1 minute. Add milk and vanilla. Gradually add remaining 1 cup powdered sugar; beat an additonal 2 minutes. Spread on tops of cupcakes. Cut down 1 side to open licorice twist into triangular pieces for 3y3s and noses. Cut jagged curved pieces for mouths. Arrange on top of cupcakes for faces. Slice gumdrops in half; attach to head for stems.

Spooky Halloween treats | Jack-o-lantern meringue cookies recipe
Since Halloween is just around the corner, for today's video recipe we are making jack o lantern meringue cookies! These spooky meringues cookies, sometimes called kisses are wonderfully crisp, light and airy, with the perfect amount of sweetness! These easy jack-o-lantern meringue cookies are the perfect make ahead Halloween treats and also make the perfect decorations for Halloween cakes and cupcakes!
Halloween Meringue cookies (kisses) recipe
Ingredients:
3 large room temperature egg whites
1/8 teaspoon cream of tartar
2/3 cup granulated white sugar
Food colouring (orange, brown and black)
Directions:
Preheat your oven to 165F/75C. In the bowl of a stand mixer fitted with the balloon whisk attachment beat the egg whites on medium speed for about a minute, or until they are nice and foamy. Add cream of tartar and continue beating for another minute or until well incorporated. Begin adding the sugar 1/2 tablespoon at a time, mixing well after each addition. The process of adding and mixing in the sugar will take around 5 minutes. Once all of the sugar has been added, scrape down the sides of the bowl and continue mixing on medium speed for another minute or until all of the sugar is dissolved and you have a nice smooth glossy meringue with a nice stiff peak. Separate 1/2 cup of meringue into a small bowl and colour it with brown food colouring. Use this meringue for the jack-o-lantern stems. Transfer it into a piping bag fitted with a # 18 star tip (or any small round or star shaped tip). Colour the remaining meringue with orange food colouring and transfer to a bag fitted with a # 4B or any large open star tip. Attach a piece of parchment to a cookie sheet or baking pan using a small amount of meringue. To pipe the pumpkin shapes hold your tip just above the parchment paper. Apply pressure, pull up, release pressure and then sharply pull away to form each of the pumpkin shapes. Using decorating scissors, kitchen scissors, a scribe, skewer or tooth pick, remove the points from each of the pumpkin tops. Using the brown meringue pipe a small stem on the top of each pumpkin. Colour the remaining brown meringue with some black food colouring and using a cookie scribe, skewer or toothpick paint jack-o-lantern faces onto each of the meringue cookies. Bake for approximately 90 minutes. Allow to cool (they aren't very hot) and then store in an airtight container!
