Traditional Huevos Rancheros

Huevos Rancheros
2 white onions
4 Roma tomatoes, cored
2 jalapenos
2 serrano peppers
6 garlic cloves (divided)
2 guajillo chiies finely chopped
Bacon grease or fry oil
Corn tortillas
Eggs
Shredded cheese, for sprinkling
Slice the onion in half, but be sure to keep the root ends intact.
Begin by preparing the vegetables: Core the tomatoes, slice the stems off the jalapeno and serrano peppers and remove the seeds, if desired to reduce the spiciness. Slice the onions in half, but keep the root intact.
Fill a large saucepan about halfway with water. Add all the vegetables and 4 of the garlic cloves. Bring to a boil for about 10 minutes or until the tomatoes are tender, adding more water if needed.
Remove the vegetables with a slotted spoon and let cool. Peel the outer skin of the tomatoes off and discard (soaking them in cold water beforehand, will release the skin easier). Cut the stems off the jalapeno and serrano peppers, and remove the seeds, if desired. Remove the root of the onions.
Add all the vegetables, along with the remaining 2 garlic cloves to a blender, and diced guajillo peppers and Salt and pepper, to taste. Blend until smooth.
Pour the contents in a saucepan to a boil. Reduce the heat to a simmer, cover and continue to cook for 10 minutes, stirring occasionally.
Meanwhile, heat about 1 tablespoon of bacon grease or oil in a cast iron skillet. Add the tortillas and flip to coat with grease on both sides. Cook until they bubble up slightly and warm through on both sides. Be sure not to overcook until crispy.
Return to the skillet, adding more grease if needed, and add the egg(s). Fry until over-easy.
Take the tortillas and top with the egg followed by some sprinkled cheese and then the sauce. Top with more cheese. Serve immediately.

Ingredients
8 large whole eggs
8 corn tortillas
Oil for frying
Roast salsa ingredients
12 oz tomatoes (3 roma tomatoes)
1/4 medium white onion
2 jalapeños or serranos

Sauté the salsa

Huevos Rancheros – Swift and Easy Recipe
4 corn tortillas
Prepared New Mexican red chile
4 eggs – cooked any style
2 tablespoons corn oil
½ cup of shredded cheddar cheese
1 cup of pinto beans
¼ cup of hash browns, or papitas
Garnish: shredded lettuce, tomatoes and onions (optional)
Directions:
1. Prepare red chile sauce and keep warm (see recipe below)
2. Heat 1-cup pinto beans, and keep warm.
3. Fry hash browns or papitas in a medium skillet, and keep warm.
New Mexican Red Chile Sauce
2 Tablespoons flour
2 Tablespoons canola oil or vegetable oil
3 Tablespoons red Chile powder (link to Bueno Foods?)
1 ½ cups water
¼-teaspoon garlic powder or 1 clove fresh, diced finely
¼-teaspoon salt
1/8 or pinch of dried oregano
Heat oil in medium size saucepan on medium to low heat. After about a minute, add flour and stir constantly so it does not burn. Cook for approximately one minute and then add red chile powder, continue stirring constantly. The consistency will be crumbly. After another minute, begin to whisk in cold water slowly. Once the sauce begins to boil, add garlic, oregano and salt. Continue cooking for 20 minutes on low heat.
Assemble your Huevos Rancheros:
4. Dip 2 corn tortillas into red chile (or green chile) for 15 seconds each, and put onto a plate, side by side.
5. Fry 2 eggs any way you choose and put them on top of the corn tortillas (I like my eggs over medium).
6. Top eggs with red chile to cover completely.
7. Top chile and eggs with cheese.
8. Add beans and hash browns aside the eggs.
9. Microwave for 1 minute, and top with garnish of shredded lettuce and tomatoes.

INGREDIENTS
1/4 large white onion, left whole, plus ¼ large white onion, chopped
6 roma tomatoes, cored
3 to 4 chiles serranos, stemmed
2 garlic cloves, unpeeled
Kosher salt
1 tablespoon to 2 tablespoons fresh lime juice (optional)
6 tablespoons lard or bacon fat, divided
8 ounces fresh chorizo
2 (15-oz.) cans black beans, or equivalent amount of freshly cooked beans and their liquid
6 large eggs
6 tostadas
4 ounces queso fresco, crumbled
1 large avocado, sliced
BONUS RECIPE: Jamaica Syrup
1 cup dried hibiscus flowers
1 cup sugar
1 whole star anise
2 cups water
Bring to a boil, simmer for 10 minutes, then steep for 30 minutes.
Add you favorite alcohol and/or seltzer for a refreshing cocktail, mimosa, or mocktail.
