Easy Healthy Coleslaw
This low-carb healthy coleslaw has no mayo and is made with cabbage, carrots, parsley, a bunch of delicious seeds, and a special secret ingredient: papaya!

INGREDIENTS
▢10 oz cabbage (white, red, or combo of both) - 300 g / 5-6 cups sliced
▢3.5 oz carrots - 100 g / 3 carrots
▢7 oz papaya - 200g / 1 ring or medium papaya
▢0.5 oz parsley - 15g / 1 hand full
▢1 Tbsp poppy seeds - 10g
▢2 Tbsp sesame seeds - 15g
▢3 Tbsp pumpkin seeds - 30g
▢3-4 Tbsp olive oil - 45-60 ml
▢2-3 limes
▢sea salt
▢pepper

Recipe: Creamy FAT FREE Vegan Coleslaw
INGREDIENTS—
SLAW
* 6 cups finely shredded white cabbage
* 6 cups finely shredded purple cabbage
* 6 cups grated carrots
* 1 cup chopped scallions (green part preferred)
* 1 cup golden raisins
DRESSING
* 24 ounces cauliflower, steamed, then chilled
* 1/2 cup Island Pineapple or Mandarin Orange Balsamic Vinegar from California Balsamic (or 1/4 cup reduced while balsamic vinegar plus 1/4 cup unsweetened pineapple
PREPARATION
* Place the cauliflower and balsamic vinegar in a high-powered blender and blend until smooth and creamy.
* Pour over slaw and mix well.
* Chill well before serving.
* For an interesting kick, add one very thinly sliced jalapeño pepper to the slaw.

Fat Free Coleslaw, by Kyong Weathersby
Delicious! Simple and easy to make! Very high in Antioxidant. Wonderful for stomach and intestines strong. Gluten-Free, Fat-Free, Cholesterol-Free, Plant Based, Vegan.
FAT FREE COLESLAW
2 ½ c cabbages, cut in chunks
½ medium onion, cut in chunks
1 carrot, cut in chunks
¼ c fresh parsley, cut in small
½ tsp sea salt
1 T turbinado sugar
1 ½ T lemon juice
½ tsp garlic powder
Put cabbages, onion, carrot, and fresh parsley in a food processor and chop them. Transfer into a mixing bowl. Add sea salt, turbinado sugar, lemon juice and garlic powder. Mix well. Ready to serve. Delicious!

SWEET AND SOUR COLESLAW - FAT FREE
Sweet and sour coleslaw recipe.
Ingredients:
- Half of a green cabbage
- A quarter of a red cabbage
- Juice of 2 small oranges
- Juice of 1lime
- 3 Tbsp apple cider vinegar
- 3 Tbsp soy sauce or salt to taste
- 3 tsp brown sugar or sucanat
- 1 to 2 Tbsp shredded ginger
- 2 small apples, diced
Add on options: shredded carrots, broccoli slaw, sliced kale, sliced napa cabbage.

Some tang, some sweet -- perfect balance. Delicious coleslaw recipe. Add your favorite veggies to make it your own. Almost FAT-FREE. (mayonnaise-free)
Recipe for Dressing:
1/4 cup apple cider vinegar
2 tablespoons sugar
1 teaspoon avocado oil
1/4 teaspoon dried mustard
1/8 teaspoon dried celery seed
Salt & Pepper to taste
(For this recipe of dressing I used approximately 5 cups shredded cabbage, 1 cup shredded carrot and 3 tablespoons red onion.)
Combine all ingredients in a small sauce pan. Heat to dissolve the sugar and mix in the spices. Cool completely. Pour over your coleslaw greens. Stir to combine. Chill for at least an hour.
