120 g unsalted butter
150 g caster sugar
1/4 tsp salt

1 tsp vanilla extract

How to bake
- Bake preheated oven at the 180 C for 35-40 minutes

2 tablespoons honey

RECIPE
DAY 199 – Cranberry Almond Honey Tart
Serves 8-10
Ingredients:
2 Unbaked 9” (23 cm) Pie Crusts
*2 cups (200 g) Slivered Almonds
¾ cup (150 g) Sugar
2/3 cup (160 ml) Heavy Cream
½ cup (50 g) Dried Sweetened Cranberries
1/3 cup (100 g) Honey
¼ cup (50 g) Unsalted Butter [cut into small cubes]
¼ cup (60 ml) Water
Zest of ¼ Small Orange
½ tsp (3 g) Salt
Egg Wash (1 egg beaten with 1 Tbsp (15 ml) water)
Some Coarse Brown Sugar <I used 1 Tbsp (15 g)>
* can be substituted with walnuts
Process:
1) Preheat the oven to 400 degrees (200 degrees in Celsius). Roll one of the pie crusts to about 10 and half inches (27 cm), place it in the bottom of a 9” (23 cm) tart pan with a removable bottom and set aside.
2) In a medium sauce pan over medium heat add the water, sugar, butter and bring to a boil without stirring ever! Just swirl the pan around. Increase the heat to medium high and cook for about 7 minutes or until the mixture turns an amber color <it took me 5 minutes>.
3) Remove from the heat and stir in the heavy cream. Return to the heat and cook for 1 minute stirring constantly. Remove from the heat, add in the honey, orange zest, cranberries, almonds, and salt, and stir until everything is smooth and combined. Let it cool for about 20 minutes.
4) Pour this mixture in the prepared tart pan, brush the sides of the crust with some egg wash, and set aside.
5) Roll the other pie crust to about 10 inch (25 cm) circle, place it over the filling, seal the edges with the bottom crust, and by pushing the palms of your hands to the tart pan, remove excess dough. Make little slits all over the top of the pie, brush it with the egg wash, and sprinkle with some coarse brown sugar.
6) Bake for about 25 minutes or until the crust is golden brown and the filling is bubbly. Cool completely before serving.

Almond Honey Lavender Tart
This tart is perfect for an afternoon tea in the spring! It's naturally gluten/refined sugar free, so it's also great for anytime of day. The fruit on top provides a nice sweetness, as well as the touch of honey inside the tart. I put lavender in mine, but if you don't like the flavor, it's just as delicious without it!
Ingredients:
4 tablespoons melted butter
1 1/2 tablespoons honey
1 egg
1 cup almond meal or almond flour (almond meal will have a coarser texture)
1/2 teaspoon salt
1/2 teaspoon dried organic lavender (optional)
