I made rosemary, almond, and honey scones, and they are absolutely delicious. These scones are warm, earthy, have an amazing unique flavour, and I honestly feel that they belong in middle earth! Topped a generous drizzle of honey and wow! We just can’t get enough. If Lembas bread from Lothlorien is anything like this, you will not be stopping at just “one small bite” with these. They will be adored and devoured.

Honey & Cheddar Scones with Black Pepper
In this recipe, Jason Barrows makes a delicious sweet and savory scone with honey, sharp cheddar, and freshly cracked pepper. The perfect scone for your next brunch!
Full Recipe + Ingredients:
3 ¼ cups flour
2 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon cracked black pepper, more for finishing
¾ cup + 2 tablespoons unsalted butter
8 ounces sharp cheddar cheese, grated
1 cup buttermilk
¼ cup honey
Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
In a large mixing bowl, combine the flour, baking powder and soda, salt, and freshly cracked black pepper. Cut in the ¾ cup butter. The butter should be unsalted, very cold, and cut into cubes to easily work it in. Cut in butter until it forms coarse crumbs.
Mix in the grated cheddar cheese. Stir in the buttermilk and honey. Mix until a dough forms.
Turn the dough out onto a lightly floured surface and knead gently. Divide the dough in half and shape each half into a 5-inch round.
Melt the remaining butter and let it cool slightly. Brush the rounds with the melted butter and top them off with even more freshly cracked pepper.
Cut each round into 6 slices and place them on the baking sheet. Bake the scones for 12-15 minutes until the tops are golden.
Serve immediately and enjoy!

Ingredients:
● Almond Scones
1 ¼ cup (150g) all-purpose flour
1 ¼ cup (150g) cake flour
1 ¼ tbsp (15g) baking powder
⅓ cup (70g) granulated sugar
5 tbsp (70g) butter
4 tsp (15g) honey
⅔ cup (160g) milk
¼ cup (30g) almond flakes
● Craquelin
⅓ cup (75g) butter
½ cup (95g) brown sugar
¾ cup (95g) cake flour
food coloring
● Almond Crumb Dough
¾ cup (110g) cake flour
1 ¼ cup (100g) sliced almonds
½ cup (1 stick/110g) butter
⅓ cup (75g) granulated sugar
● Assembly
1 large egg yolk (20g)
Steps:
1. Preheat the oven to 170°C (338°F).
2. Sift flours and baking powder. Add the sugar, butter and honey and mix using the flat beater (or with a fork till the butter is well incorporated, if done by hand).
3. Add the milk gradually and then the almond flakes.
4. Roll the dough to 0.5 inch (10mm) thickness and freeze for 15 minutes.
5. For the craquelin use the flat beater and mix butter, flour, sugar and food coloring. Roll the dough to 0.1 inch (3mm) thickness and freeze for 15 minutes.
6. For the Almond Crumb Dough sift flour and mix with sugar, butter and almonds. Keep it in the fridge.
7. Grease and line the molds with parchment paper. Cut circles using a cookie cutter and refrigerate. Repeat the process for the craquelin and freeze.
8. Brush the scones with egg yolk and sprinkle almond crumbs on each scone or place a craquelin circle on top.
9. Bake for 15 minutes.
Tips:
1. If you don’t have ring mold, leave the scones just the way they are. They just help the scones have an even shape when they rise in the oven.
2. For the assembly, you can also use water or a whole egg to stick the almond crumbs or the craquelin.
