How To make Helen's Cheesecake
3/4 c Pecans, coarsely ground
3/4 c Graham crackers, crushed (or
-boxed graham cracker -crumbs) 3 tb Unsalted butter, melted
4 8 oz.
- 4 Eggs
1 1/4 c Sugar
1 tb Fresh lemon juice
2 ts Vanilla
2 c Sour cream
1/4 c Sugar
1 t Vanilla
-Mazzola No-Stick spray -cream cheese, at room -temperature
Crust: Mix ground pecans, crushed graham cracker crumbs and butter together. Press onto bottom of a 9" or 10" springform pan that has been sprayed generously with Mazzola No-Stick spray. Set aside. Filling: Preheat oven at 350 degrees. Beat cream cheese in a large bowl with an electric mixer until smooth. Add eggs, 1 1/4 cups sugar, lemon juice and 2 tsp. vanilla. Beat thoroughly. Spoon over crust. Set pan on baking sheet. Bake 9" pan for 50-55 minutes or 10" pan for 40-45 minutes at 350 degrees. Remove from
oven and let stand at room temperature for 15 minutes (leave oven on). Topping: While cheesecake is baking, combine sour cream, 1/4 cup sugar and 1 tsp. vanilla. Blend well. Cover and refrigerate. Once cake has stood at room temperature for 15 minutes, spread topping over. Return to oven and bake 5 minutes longer. Let cool thoroughly then refrigerate for at least 24 hours or preferably 2 to 3 days. Remove from pan and enjoy! ***This recipe comes from an old Supervisor of mine (Helen). She used this recipe to sell her cheesecakes professionally. It appears rather basic but is a huge hit with any cheesecake officianado! We used to have raffles as fundraisers for this cheesecake.***

DURIAN MOUSSE CAKE - Bánh mousse sầu riêng | Helen's Recipes
I am so excited to share this recipe with you, especially with those who love durian, the king fruit of Southeast Asia. For durian antifans, you can replace with strawberry or mango.
Ingredients:
For the sponge cake:
4 eggs
2 tbsp vegetable oil
1 tbsp milk (or water)
1 tsp vanilla extract
1/8 tsp salt
1/2 tsp Lime juice
100 g sugar
100 g flour
For the durian mousse:
400 g durian
200 ml milk
15 g gelatin powder
250 ml whipping cream

How to make Rainbow Jelly - Thach rau cau | Helen's Recipes
Ingredients:
For coffee layer:
1 tbsp agar-agar powder (Telephone / Champion Cup Brand)
4 tbsp water
1 cup brew coffe / milk coffee
1 cup water
2-3 tbsp sugar
For coconut layer
1 tbsp agar-agar powder
4 tbsp water
1 cup coconut milk
1 cup water
2-3 tbsp sugar
For pandan layer:
1 tbsp agar-agar powder
4 tbsp water
2 cups water
1/2 tsp pandan extract
2-3 tbsp sugar
For other colors
1 tbsp agar-agar powder
4 tbsp water
2 cups juice (carrot for orange, berries for red etc)
2-3 tbsp sugar
** Note: This recipe makes quite firm jelly, so if you want it a bit softer, you may increase water amount for each layer from 1 cup to 1+1/4 cup. Happy cooking ^^

INGREDIENTS LIST (Makes About 70 Meringues):
Meringue
4 1/2 ounces (125 g) egg whites (from 3 large eggs)
1/2 teaspoon cream of tartar
1 cup plus 3 tbsp (240 g) granulated sugar
3/4 teaspoon cornstarch
1/8 teaspoon baking powder
1/2 teaspoon vanilla extract
Dark Chocolate Coating and White Chocolate Coating (halve the quantities if you are doing a mix of dark and white chocolate)
Dark Chocolate Coating
1 1/3 cups (200 g) hazelnuts
3 1/2 ounces (100 g) dark chocolate (70% cocoa solids), chopped into 3/4-inch/2-cm pieces
1 1/2 ounces (40 g) milk chocolate, chopped into 3/4-inch/2-cm pieces
White Chocolate Coating
5 ounces (140 g) white chocolate, chopped into 3/4-inch/2-cm pieces
2 ounces (55 g) freeze-dried strawberries, finely chopped
