How To make Hearty Beef Vegetable Soup with Noodles
1 lb Medium Ground Beef
1 cn 14 oz, Italian Tomato Sauce
8 c Water
2 Onions, chopped
1 lb Frozen Corn, Peas, Carrots
6 oz Egg Noodles
1 1/2 tb Extra Virgin Olive Oil
1 tb Oregano
1 tb Mexican Chili Powder
1 tb Freshly Ground Pepper
2 t Red Cayenne Pepper
2 t Salt
Put 8 cups of water, 1 14 oz can of Italian tomato sauce, 2 medium sized onions (chopped), 1 pound of mixed frozen vegetables into a pot. Add the seasoning and olive oil, heat on high for 30 minutes. Brown the beef in a frying pan, transfer the beef to the soup mixture using a slotted spoon to leave the fat in the frying pan. Turn the heat to medium, heat for 10 minutes. Add the egg noodles, turn the heat to low and heat another 20 minutes. Taste and adjust seasoning. Serve with grated Parmesan cheese.

- 28oz Bag of Frozen Mixed Vegetables

- 1 Tsp Dried Thyme
- 2 Tbsp Seasoned Salt, Divided

Mom's Vegetable Beef Noodle Soup
RECIPE:
1950's Vegetable Soup
No act of love, however small, is ever wasted.
Easy cooking for busy families The recipe is below:
1 lb of ground hamburger or left over roast
1 chopped onion
1-1/2 tsp. granulated garlic OR 2 cloves crushed fresh
1 can diced tomatoes
1 can whole kernel corn
1 can green beans
1 can sliced carrots
1 can english peas
All canned vegetable are added with the juice also in the can
Or add the canned veggies you like
1/2 a can of large tomato juice - add more if needed
1 Tblsp. powdered beef broth
Cook the meat and onion. Add the other ingredients and let simmer 15 or 20 minutes. Add....either elbow macaroni, potatoes, rice or some other type of pasta (just a few handfuls)...cover and let it cook until tender. Test for additional seasoning and enjoy!

My Ron and I love spending weekends at home relaxed, and this soup is one I love to prepare, I usually serve it with pieces of crusty bread, cornbread or saltine crackers. This delicious chunky vegetable beef soup is perfect for entertaining family or friends and it freezes perfectly for another day, I hope you give it a try. ❤️
INGREDIENTS _____________
1 1/2 lbs. Chuck Roast (bite size pieces)
1 lbs. Red potatoes (1/2 inch pieces)
1 1/2 C. Fresh green beans or frozen (tips removed & cut into 3)
1 3/4 C. Fresh corn (you can use frozen)
1 Medium Chopped onion
1 1/4 C. Chopped celery
1 1/4 C. Chopped carrots (i used 3 skinny long ones)
1 C. Frozen peas
4 Large garlic cloves (minced)
2 14.5 oz petite diced tomatoes
2 1/2 Tbsp Olive Olive Oil (divided)
2 tsp dried BASIL
1 1/2 tsp dried THYME
1 1/4 tsp OREGANO
1 tsp Crushed ROSEMARY
3 tsp sugar (not 2)
2 Bay leaves
1/2 Can Tomato paste (3oz)
Pepper as needed
Salt as needed
1 Tbsp BEEF BOUILLON (I used KNORR)
3 tsp Lemon juice (start with 1 or 2 if you like)
7 C. Beef broth
Chopped parsley (for garnish)
All Purpose Flour (as needed for meat)
