Boston bookshop owner, Henry Knox, used his literary interest in military manuals to become the chief artillery officer for General Washington. Chef Staib visits Fort Mercer to learn how Knox and a militia helped win America's independence. He cooks pease soup with pork and Sally Lunn toast, Hunter's stew with rabbit, beef, turkey and pork, skillet potatoes and lights cannonball punch on fire.

The Elder, based in Bath, is Mikes newest restaurant and opened fall 2020. It offers a sumptuous yet informal dining experience where guests are taken on a journey of discovery. Everyone who visits The Elder leaves having learnt something – whether it’s a story about the history of Bath, the local estates where the produce is sourced or how the food is prepared.
As the Executive Chef, Mike Robinson ensures sustainability is at the core of The Elder message going to incredible lengths to ensure all meat, fish and veg are grown or harvested humanely, carefully and with care. Our wild food offering is unique in the UK - as land managers we control wild deer herds on private estates and process the venison in our own FSA regulated larder.
Seated in a series of elegant and atmospheric dining rooms, each portioned along the lines of the original Georgian houses they reside within, guests of the Elder are welcomed as old friends.
