Brownie Layer Cake - How to make Fudgy Chocolate Cake - Chocolate Strawberry Cake
This chocolate strawberry brownie cake combines the goodness of rich, indulgent chocolate brownies in an entire layer cake form. It is the perfect treat to make for Valentine's Day for your loved one or simply for your own self, because self love must be your top priority (especially when it comes to this decadent treat) ????????♀️????????????????
The chocolate brownie layers are filled with rich, supremely fluffy yet light chocolate buttercream frosting. I've used the Boiled Milk Buttercream Frosting for this recipe, eliminating the use of cream and replacing it with full fat milk. So in this recipe, I've used 400 grams of full fat milk. I've also reduced the amount of sugar to 150 grams. Yes, I've halved the sugar quantity here. It does not affect the texture of the buttercream, which is what I absolutely LOVE about this ermine buttercream frosting. You can use the full 300 grams of sugar if you wish, I just find that keeping the sweetness to low in the brownie and buttercream elements helps heighten the beauty of the homemade strawberry jam.

I've also made my own homemade strawberry jam with just two ingredients - fresh strawberries and sugar. You can use store bought jam as well but there is just something beautiful about using your own jam in this recipe!
As a final touch there are also some decadent chocolate ganache drips on the cake.

The brownie layers in this recipe contain egg, but you can make this eggless by simply following the steps to make my supremely fudgy eggless brownies. Just make the brownie batter following the instructions in this video:
When making the eggless brownie recipe, double the ingredients given in this full printable recipe on my website:
The reason to double the ingredients is because unlike egg based chocolate brownies, these eggless brownies will not rise. So you would have to double the ingredients and divide the brownie batter equally in 2 6-inch cake tins. Follow the rest of the steps as given in this video above.

240 grams dark chocolate, chopped roughly
200 grams salted butter, room temperature
100 grams caster sugar
3 eggs + 1 yolk, room temperature
1 teaspoon vanilla extract
100 grams all purpose flour
1 tablespoon cocoa powder, unsweetened
For the Buttercream frosting:
1 batch boiled milk buttercream frosting
30 grams cocoa powder, unsweetened
For the Strawberry Jam
200 grams fresh strawberries, chopped roughly
150 grams caster sugar
For the Chocolate Ganache Drips:
160 grams cream
80 grams chocolate

Prepare Fudge Cake:
-Maida (All-purpose flour) 210g (1 & ½ Cup)
-Cocoa powder 56g (1/2 Cup + 2 tbs)
-Namak (Salt) ¼ tsp
-Baking soda ½ tsp
-Baking powder 1 tsp
-Anday (Eggs) 2 (room temperature)
-Pakola Full Cream Milk 1 Cup
-Cooking oil ½ Cup
-Bareek cheeni (Caster Sugar) 1 & ½ Cup
Prepare Chocolate Ganache & Frosting:
-Whipping cream 350ml
-Pakola Full Cream Milk 3 tbs
-Milk chocolate grated 400g
-Makhan (Butter) unsalted 60g (room temperature)
-Icing sugar ¾ Cup
-Chocolate chips
Directions:
Prepare Fudge Cake:
-Grease 8-inch baking pan with cooking oil & line with butter paper & set aside.
-On a bowl,place a sifter,add all-purpose flour,cocoa powder,salt,baking soda,baking powder & sift dry ingredients together,mix well & set aside.
-In a bowl,add eggs,milk,cooking oil,caster sugar & beat well.
-Now add dry ingredients & beat on low speed until combined then fold with the help of spatula.
-Pour batter in prepared baking pan & bake in preheated oven at 180C for 40 minutes (on lower grill).
-Take out from oven,spray water immediately to keep cake moist.
-Take out cake from pan and keep it on rack & let it cool completely.
Prepare Chocolate Ganache & Frosting:
-In a saucepan,add whipping cream & milk,turn on the flame,mix well & simmer on low flame until its hot (6-8 minutes).
-Remove from heat,add chocolate & mix well until chocolate melts.
-Add butter & mix well until well combined.
-Transfer to a bowl & let it cool completely while mixing at room temperature.
-Reserve 1 & ½ Cup of ganache for later use.
-Cover remaining ganache & refrigerate until chilled.
-Take out from refrigerator and beat well for 3-4 minutes.
-Add icing sugar,beat until soft peaks form & transfer to a piping bag.
-With the help of the layer cake slicer,horizontally cut three layers of cake.
-Place first layer of cake on cake stand,apply prepared chocolate frosting and add chocolate chips.
-Place another layer of cake,apply prepared frosting and add chocolate chips & repeat the same process for top layer of cake and cover the sides of the cake with frosting & refrigerate for 1 hour.
-Pour reserved chocolate ganache warm on the top of the cake,apply grated chocolate on the sides of the cake & refrigerate for 30 minutes.
-Decorate & serve!

Ingredients
Cake
2 ½ cup (375 g) all-purpose flour
1 cup (120 g) regular cocoa powder
2 ¼ (12 g) tsp baking soda
1 ½ (8 g) tsp salt
1 tsp (3 g) baking powder
1 ¼ (250 g) cup sugar
¾ cup (150 g) dark brown sugar, packed
1 cup (225 g) unsalted butter, room temperature
2 ¼ cup (560 ml) buttermilk, room temperature
2 large large eggs, room temperature
1 ½ (8 ml) tsp vanilla extract
6 oz (170 g) bittersweet chocolate, chopped, melted and cooled
Frosting
3 cup (775 g) unsalted butter, room temperature
1 cup (250 ml) cream cheese, room temperature
24 oz (680 g) bittersweet chocolate, chopped, melted and cooled
4 tsp (20 ml) vanilla extract
½ (3 g) tsp salt
4 cup (520 g) icing sugar, sifted
⅔ (80 g) cup cocoa powder, sifted
Directions
Cake
1. Preheat oven to 350F (175 C). Grease and line with parchment 3 8-inch round cake pans.
2. Sift flour, cocoa, baking soda, salt and baking powder into a large bowl (or into the bowl of a standup mixer fitted with the paddle attachment). Add sugars and butter and blend until a crumbly texture.
3. In a small bowl, whisk buttermilk, eggs and vanilla together and add to larger bowl while mixing on low speed. Once incorporated, increase speed to medium-high and blend until smooth, about 3 minutes.
4. Slowly pour in melted chocolate until evenly blended, then scrape batter equally between prepared cake pans, tapping pans gently to remove any large bubbles.
5. Bake cakes for 40 to 50 minutes, until a tester inserted in the center of the cake comes out clean. Cool cakes for 30 minutes in the pan, then carefully turn out onto a cooling rack to cool completely.
Frosting
1. For frosting, beat butter and cream cheese on high speed, scraping sides frequently, until light and fluffy. Reduce speed and add melted chocolate. Add vanilla, salt, icing sugar and cocoa and beat until smooth.
2. To frost the cake, slice each cooled cake layer across in half. Top one layer with icing and spread. Place second cake layer on top, and repeat with remaining layers. Ice the top of the cake and finish with the sides. Chill cake to set, but it is best stored at room temperature.
