Fruit Cocktail Ice Box Cake | Easy To Make
Here's the super easy and yummy Fruit Cocktail Ice Box cake. Indulge with the not so sweet cake.
Here's what you'll need:
200g crushed biscuit-digestive or graham ( 2cups - 1 cup for the base and 1 cup for the 2nd layer)
40g melted butter-salted (4 tablespoon)
200g cream cheese (1 cup)
20g sugar (2 to 3 tablespoon)
300ml whipping cream or all purpose cream-chilled (2 cups)
1 teaspoon vanilla extract
500 grams fruit cocktail (drained) (3 cups)
some apricot jam (optional)

#Cakes, #CakesFromABox #5Weeks #BakingCakesFor 5 weeks, every Monday, I will be turning a simple box cake mix into a spectacular cake for your family and friends. This week a Yellow box cake mix is turned into a extremely moist Fruit Cocktail Cake. Each week a different cake mix turned into a spectacular cake for 5 weeks.
Base:
1 cup Crushed Pineapple
1 Diced Pear
2/3 cup Peaches
1/2 cup Brown Sugar
4 tablespoons Butter
Preheat oven to 350 degrees. Place butter in 13x9 glass pan, put in oven to melt. Take from oven and mix all ingredients with butter.
Cake:
1 cup Water
3 eggs
1/2 cup oil
1 Yellow Cake Mix Box
Mix first 3 ingredients, slowly add yellow cake mix, blend.
Pour cake mixture over fruit. Bake 30 minutes. Let cool before serving. Refrigerate cake.

3 cups (360gms) all purpose flour
2 teaspoon (8gms) baking powder
2 cups (570gms) yogurt
1 teaspoon (3gms) baking soda
1 + ½ cup (150gms) castor sugar
1 cup (120ml) vegetable 0il
2 drops almond extract
Zest of 1 orange
Filling
½ cup (100gms) granulated sugar
¼ cup (60ml) water
1 + ½ cup fresh fruit
Frosting
2 cups (460ml) whipping cream
¼ cup (30gms) cream cheese
1 tsp (5ml) vanilla
To assemble
Fresh fruit
Flaked almonds
For glaze
1 tbsp (20ml) corn syrup
1 tbsp (15ml) water
