How To make Frosted Jam Cake Icing
1 c Heavy Cream
2 c Sugar
1 tb Butter
24 Whole Pecan Halves
Combine the cream and sugar in a heavy saucepan and bring to a boil, cooking at a full rolling bois for 2 minutes, (A candy thermometer will read 234 degrees F.) Cool slightly, then beat until it just begins to thicken. Beat in the butter and immediately spread between the layers and on top of the cake leaving the sides unfrosted. Betty demonstrates how to make Caramel Frosting for a Blackberry Jam Cake. This cake and frosting comprise one of the desserts on the Christmas table this year. (The recipe for the cake has been previously uploaded in Betty's Kitchen.) This is a traditional Christmas dessert in Kentucky.
Caramel Frosting for a Blackberry Jam Cake
1/4 cup melted butter
1/4 cup white sugar
3/4 cup brown sugar
1 cup whipping cream
18 large marshmallows, cut in half
3 cups confectioner's sugar (This is the same as powdered sugar or icing sugar.)
1 teaspoon vanilla extract
In a medium-sized saucepan, stir together butter, white sugar, brown sugar, and whipping cream. Bring to a boil over medium heat, stirring constantly. Boil for 2 minutes, stirring constantly. Remove from heat. Add marshmallow halves and stir until they are melted. Stir in vanilla. Add confectioner's sugar slowly, beating with an electric mixer on medium speed until frosting is of spreading consistency. For thicker consistency, refrigerate, checking occasionally. Spread on cooled cake, cupcakes, or cookies. Enjoy! --Betty :)

1 Frosting Recipe for 100s of Flavours!
In this tutorial I'll show you how to adjust a buttercream frosting recipe to add any flavour ingredient: wet ingredients like caramel or melted chocolate, dry ingredients like Oreo crumbs or freeze dried fruit, and flavour extracts like vanilla or almond. Tell me in the comments: what's your favourite flavour frosting?
4 MINUTE BUTTERCREAM RECIPE
Ingredients:
2 1/2 cups (565g or 20oz) unsalted butter*
907g or 2 lb (about 7 cups) powdered sugar (icing sugar)
1/2 teaspoon salt
1/2 tablespoon vanilla extract
2-3 tablespoons milk*
Mix the butter for 30 seconds using the lowest speed on your mixer, until smooth. Add a quarter of the sugar at a time, mixing on the lowest speed after each addition. Add vanilla and 1 spoonful of milk* at a time, until buttercream is silky smooth. It should be easy to stir and when you pull a spatula through it, your spatula should leave a smooth trail and soft peaks behind.
*For certain flavour ingredients you should not add the milk because it will make the buttercream too runny for frosting a cake or cupcake. I explain this in lots of detail in the video!

In this cake tutorial you will see filling and frosting an cake. Frosting a cake with Italian buttercream and filling a cake with buttercream and jam. This is part 2 of a 3 part series. Part 1 is at the following link if you would like to watch the baking part.
I used combination of my vanilla cake recipe which is also called a 1234 cake (Victorian) and an old cake recipe from the 1800's called a Ribbon Cake. The layers are a combination of vanilla cake and spiced cake. They are filled with a red jam. Although I used my own style of filling and made Strawberry buttercream. Stay tuned for part 3.
